This Air-Fryer Frittata is bursting with bold flavors, has a hint of spice, and is super easy to prepare.

It’s a good morning when I get to eat frittata for breakfast. Frittata—or the lazy cook’s quiche, as I like to call it, referring to myself—can be a vessel for so many tasty meats and veggies. One of the main differences between frittata and quiche is that frittata doesn’t have a pastry crust. No need to spend a bunch of time making a crust or thawing a frozen one! Just eggs and fillings, baby.

Normally, frittatas are baked in the oven or cooked on a stovetop, filled with veggies, cheeses, and herbs. Some recipes call for starting the frittata on the stovetop and finishing it in the oven. This glorious recipe is completely air-fried, which cuts down the cooking time significantly compared to a regular oven-baked frittata.

This delicious breakfast sausage and veggie-filled frittata comes out perfect in about 30 minutes. The cheese and sausage lend enough salt to flavor the eggs to perfection, and the cayenne adds a nice kick.

Is This Air-Fryer Frittata Healthy?

Yes, this air-fryer frittata is healthy. Eggs are packed with protein, relatively low in fat, and a good source of vitamins B12 and D. Starting your day with plenty of protein allows you to feel fuller longer. Additionally, red bell pepper contains vitamins C and A and adds some fiber to the dish.

The breakfast sausage might be the unhealthiest thing about this recipe, as it adds a good bit of fat and calories, but it also provides protein in addition to the eggs. If you want to cut the fat and calories, consider using turkey-based breakfast sausage. This recipe is keto-friendly and can be vegetarian if you leave out the sausage (be sure to add a bit of salt to the frittata if you do this!) or use plant-based sausage instead.

I feel like every time I turn around, there’s a new recipe to try in my air fryer. One reason I love this method of cooking is because of the easy cleanup. Air-fryer recipes also require a lot less cooking time and less oil than traditional cooking methods. Your air fryer can also cook eggs in many other styles. How To Make Ahead And Store

This frittata can be stored in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months. To reheat from the fridge, place the frittata back in the air fryer at 300 degrees Fahrenheit for about 5 minutes. Thaw frozen frittata in the fridge overnight before reheating.

Serving Suggestions

This air-fryer frittata is so delicious, it will do just fine on its own as a breakfast or brunch. However, for a sweet complement, serve it on a weekend morning with this healthy Peach Breakfast Quinoa, a Strawberry-Pineapple Smoothie, or an Upside-Down Banana Bread Cake.

Ingredients

  • Cooking spray
  • 4 ounces breakfast sausage fully cooked and crumbled
  • 4 large eggs lightly beaten
  • 1/2 cup shredded cheddar-Monterey Jack cheese blend
  • 2 tablespoons red bell pepper diced
  • 1 chopped green onion
  • 1 pinch cayenne pepper

Instructions

  • Preheat your air fryer to 360°F. Lightly coat a 6×2-inch cake pan with cooking spray or line with parchment paper.
  • In a large bowl, mix together the crumbled sausage, beaten eggs, cheese blend, diced bell pepper, chopped green onion, and cayenne pepper until well combined.

  • Transfer the egg mixture into the greased cake pan, spreading it evenly.

  • Place the cake pan in the air fryer and cook for 18 to 20 minutes, or until the frittata is set and lightly golden on top.
