Use the air fryer for an easy-peasy way to cook an old classic.

I love almost all vegetables, but if I had to pick a favorite, the sweet potato might be the winner. Whether cubed and blackened in a cast-iron pan with a few seasonings and some garlic, or roasted to perfection in the oven and slathered in creamy butter and a dash of salt, the sweet potato has been a favorite of mine since I was a tiny tot.

While my love for sweet potatoes is tried and true, what I don’t love is how long it can take to cook them. Enter the air fryer. In just 40 minutes, you can have a succulent, steamy baked sweet potato that makes a great side, snack, or even dessert. All you do is prep the potatoes, season them, and then stick them in the air fryer at 390°F until they become golden brown and crispy. And while some people peel the skin, you don’t have to. Not only are they full of flavor, but they’re also nutrient-dense.

Sweet potatoes are a wholesome, tasty, simple side dish that can go with nearly any main. Can you blame me for loving them like I do?

Is A Baked Sweet Potato In The Air Fryer Healthy?

Overall, air frying is considered a healthier alternative to pan frying and can be quicker than oven baking. Sweet potatoes are also a vitamin-rich root vegetable, making this recipe a hit if you’re wanting to up your veggie intake while keeping it simple. Sweet potatoes are full of carbohydrates, beta-carotene, and vitamin C. If you need to skip the salt, you can easily leave that out; otherwise this recipe is healthy just as it is.

One Of The Greatest Inventions Of All Time

The air fryer was first invented in 2005 by Dutch engineer Fred van der Weij. By 2010, the first air fryers were introduced to the public. Today, you can find air fryers all over the world, enhancing the ease in people’s kitchens no matter what their culinary culture is. Using an air fryer means much less oil, making it a solid choice if you’re trying to cut down on fat or calories. If you don’t have an air fryer already, I highly recommend getting one; it’s a great investment for your kitchen collection (especially for recipes like this one!).

How Do I Store Leftovers?

Once cooled, pop the potatoes into an airtight container and store in the fridge for 3 to 5 days. Alternatively, you can freeze cooked sweet potatoes for up to 6 months. Once fully cooked and cooled to room temperature, store in a freezer-safe, airtight container.

Serving Suggestions

Sweet potatoes are as versatile as they are tasty, and thanks to the simplicity of this recipe, you’ll have a lot of options when it comes to rounding out your meal. These taters make a great side to Chocolate Chili or as a side to broccoli and this absurdly delicious garlic steak recipe. Sweet potatoes are also delicious as a breakfast food, especially when topped with a fried egg, slices of avocado and a scoop of this breakfast quinoa.

Ingredients

  • 2 medium sweet potatoes
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt

Instructions

  • Wash and dry the sweet potatoes thoroughly. Using a fork, poke several holes in each potato to allow steam to escape during cooking.

  • Rub the sweet potatoes with olive oil and sprinkle them evenly with salt. This helps to enhance their natural flavors and crisps the skin.

  • Place the sweet potatoes in the air fryer basket, ensuring they are not touching for even cooking. Set the air fryer to 390°F and cook for about 35 minutes, or until the potatoes are tender inside and the skins are crisp.
