This Vegan Peppermint Bark is a simple and gorgeous holiday-friendly delight!

I fully stand by food gifts as a love language, especially when they involve chocolate. And especially when that chocolate involves mint. Honestly, the only thing I love more than gifting edible treats is pretending I made them last-minute when I’ve actually eaten half the batch myself the night before. But this one barely made it to the gift bags because I kept “testing” it. For quality control purposes, obviously.

This vegan peppermint bark is everything I want in a holiday dessert. It’s bold and rich with dark chocolate, mellowed out by the creamy coconut butter, and the mint makes it feel fresh without being reminiscent of toothpaste. You only need five ingredients, which is great when your holiday to-do lists are already jam-packed. My first batch was dreamy, striped, and swirly. By batch five, I went with full-on crumbly topping. Honestly, I’m not even mad about it.

So now this is my thing: chocolate, mint, creamy coconut, crunchy snap—like a grown-up Andes mint but vegan, gluten-free, and a lot more fun to look at. I gave some to a friend who said it “tastes like Christmas, but not in an annoying way,” which I’m choosing to take as the highest compliment.

Is This Vegan Peppermint Bark Healthy?

While I wouldn’t go as far as labeling it a health food, this bark is made from natural, wholesome ingredients and has no extra sugar. The dark chocolate, coconut butter, and almond milk keep the whole thing dairy-free and vegan-friendly, and of course, it’s naturally gluten-free as well. So it’s a great sweet treat to pass around at a party where you know there will be special dietary needs.

Share The Love With Foodie Gifts

Gifting can be tough. There’s a fine line to walk between thoughtful and overdone. My favorite way to walk that line is with a food gift, like baked goods or chocolates, tailored to the recipient’s tastes and dietary preferences. They feel personal without overstepping, they don’t take up much space in someone’s home, and they have one simple job: to be delicious. This chocolate bark is my go-to for that reason. It’s fast, low-effort, and low-pressure… but it always goes over well. Plus, it looks so cute wrapped up in little bags or holiday tins!

How Do I Store Leftovers?

Store leftover chocolate bark in an airtight container in the fridge for up to 1 week. If your kitchen is cool, the counter is fine for a couple of days, but the chocolate might soften. For longer storage, freeze the bark in a zip-top bag with parchment paper layered between the pieces for up to 2 months.

Serving Suggestions

When you’re snacking on your peppermint chocolate bark, there are a few fun ways to dress up the occasion even more. I love to have a Vegan Hot Chocolate on the side—you could even add a dash of peppermint to your drink to match! If you’re looking to get away from chocolate, try a cozy Chai Latte instead, which is especially comforting during those colder months. If you want something light, some fresh Fruit Kabobs are also a nice, refreshing snack to contrast with the rich dark chocolate in the bark.

Ingredients

  • 1/2 cup coconut butter
  • 1/2 cup lightly packed fresh mint roughly chopped
  • 1 teaspoon pure peppermint extract
  • 2 tablespoons hot almond milk
  • 8 ounces dark chocolate

Instructions

  • Place the coconut butter in a microwave-safe bowl and microwave until smooth and creamy.
  • Add the melted coconut butter, along with the chopped mint and peppermint extract, into a small food processor and process until the mint is broken down.
  • With the food processor running, stream in the hot almond milk until the mixture turns wet and crumbly. Set aside.
  • Place the dark chocolate into a microwave-safe bowl and melt using half power and 30 second intervals, stirring between each interval, until smooth and creamy.
  • Line a baking sheet with parchment paper and pour the melted chocolate onto it. Spread the chocolate so it's in roughly an 11×8-inch rectangle.

  • Crumble the mint mixture over the chocolate and lightly press the crumbles into the chocolate, leaving a little bit of the dark chocolate showing through.
  • Refrigerate until firm, about 1 hour.
  • Break into chunks and enjoy.
