Vegan Peach Cobbler

When you live near the Georgia border like I do, a state that’s famously known as the “Peach State,” you get pretty spoiled with the quality of fresh peaches available. As soon as the farm stands start brimming with these delicious stone fruits, I start making peach cobbler on repeat. It’s always the most requested dessert at family gatherings and definitely the first to disappear whenever I set it on the dessert table.

Though I do love the buttery taste of a classic cobbler, I like that this recipe is one that my vegan and dairy-free friends and family can also enjoy. Juicy peaches are mixed with sugar and spice and then topped with a delicious biscuit crumble. It’s just as good as a regular cobbler, and the use of coconut oil instead of butter lends a nice nuttiness to it. Served with a scoop of ice cream, it’s pure magic!

You also can’t beat how quick and easy this dessert is to make. It’s unfussy and slightly rustic, which means that even the most novice baker can pull it off.

Is Vegan Peach Cobbler Healthy?

For a dessert, this recipe is on the cleaner side. It takes advantage of fresh, seasonal peaches, which are high in vitamin C and fiber. Cinnamon and nutmeg both contain antioxidants, so they both bring more than just that delightfully warm and rich flavor. Keep in mind that even though this is a vegan dessert, it’s still high in sugar, so it’s best to enjoy it as an occasional treat. You can also use oat flour instead of all-purpose flour and maple syrup in place of cane sugar if you’d like to make this gluten-free and refined sugar-free.

What Peaches Are Best To Bake With?

Any peach variety would work for this recipe, though I recommend you use yellow or donut peaches because they hold their shape better during baking. White peaches and nectarines would also work in a pinch. Peaches are the juiciest and most flavorful during their peak season from mid-July to mid-September. You want to look for slightly firm (but not hard) peaches that don’t have any soft spots. Pro tip: If your peaches are a bit too firm, you can place them in a paper bag and let them ripen for a day or two before using.

How Do I Store Leftovers?

If you have any leftover cobbler, allow it to cool completely. You can then either cover them tightly with plastic wrap or transfer them to an airtight container and store them in the fridge for 3-4 days. You could also freeze your leftovers for up to 3 months, though the biscuit topping may become soggy once thawed (it’s best to thaw in the fridge overnight). When ready to enjoy again, reheat your cobbler in a 350°F oven for about 10 minutes.

Serving Suggestions

Caramelized, melt-in-your-mouth fruit paired with a crunchy, crumbly biscuit topping is a flavor-filled combo that is only made better when served with a delicious scoop of ice cream. Ingredients

  • 6 large peaches peeled, pitted, and sliced
  • 1/2 cup organic cane sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup coconut oil melted
  • 1 teaspoon pure vanilla extract

Instructions

  • Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  • In a large bowl, combine the sliced peaches, cane sugar, cinnamon, and nutmeg. Toss to coat evenly and pour into the prepared baking dish.

  • In a separate bowl, whisk together the flour, baking powder, and salt. Stir in the almond milk, melted coconut oil, and vanilla extract to form a smooth batter.
