Transform your Taco Tuesdays with these vegetarian Tasty Tofu Tacos.

One of the great things about tacos is that you can constantly switch them up and try new things. Go from hard to soft shells, switch up the veggie mix, make them super spicy, leave them mild, and, in the case of today’s recipe, if pork, chicken, and beef aren’t doing it for you, go with tofu.
That’s how I came across this recipe. l had planned on making a huge salad for dinner one night, in an effort to be a bit “lighter” and skip the meat. But, perhaps still thinking about my neighbor’s drool-worthy veggie BBQ from last weekend, I felt like switching things up more than your typical ho-hum salad. So along comes our superstar ingredient: tofu.
When cubed or crumbled, tofu has a wonderfully substantial, meaty texture that works perfectly as a taco filling. In fact, when crumbled, it somewhat resembles ground beef or pork. Pair it with some classic taco seasoning, a dollop of sour cream, and a sprinkle of fresh cilantro, and you’ll be able to effortlessly interchange your Taco Tuesdays and Meatless Mondays.
Are These Tasty Tofu Tacos Healthy?
Tofu, which is made from compressed soy milk, is high in plant-based protein. In fact, it’s actually a complete protein, meaning it contains all nine of the essential amino acids that the human body needs. Apart from protein, tofu is also high in calcium, manganese, copper, selenium, and zinc. It’s a healthy component for most well-rounded diets.
This recipe is vegetarian and can be made vegan, provided you replace the sour cream with a plant-based alternative. For a gluten-free version, make sure the soy sauce, taco seasoning, and tortillas used are certified gluten-free. To make it keto-friendly, use low-carb tortillas or substitute them with lettuce wraps.

The Right Tofu For Tofu Tacos
When you’re buying tofu at the grocery store, you’ll notice there are several different types to choose from, each with a different texture. How do you know which one you need?
Well, the various tofu texture types—ranging from very soft to very firm—have to do with how much water has been pressed out of the tofu. Silken tofu, for example, has the consistency of a custard or pudding and is ideal for blending into sauces or soups. Firm tofu has a spongy texture that works well for baking or stir-frying, while extra-firm or super-firm tofu has the least amount of water content and works well for grilling, frying, or crumbling. It’s the latter type that I recommend for this recipe; it holds its shape well and contributes to a “meaty” texture similar to ground beef.

How Do I Store Leftovers?
To store leftovers, put the tofu and veggies in separate containers in the fridge for up to 2-3 days. You can reheat the tofu in a pan over medium heat. Do the same for the tortillas. Heat them in a hot, dry pan until they’re warm and flexible. The cabbage should be added right before you serve.

Serving Suggestions
As stated earlier, you could always serve your tofu tacos with a serving of Fajita Veggies. Try also adding a vibrant salsa, such as Grilled Pineapple-Mango Salsa or a simple Pico de Gallo. Pair that with guacamole and some Keto Tortilla Chips as a side. For something to drink, pair it up with some pink lemonade or a delicious Strawberry Agua Fresca.
