Who says waffles have to be sweet? Take your salty breakfast craving and make these Savory Waffles.

Make no mistake: I’m a sucker for a classic breakfast waffle with a generous drizzle of Vermont maple syrup and fresh blueberries. But the idea of a savory waffle sounds pretty genius, does it not?

Savory waffles remind me of the time I made a smoked turkey and Gouda sandwich with two waffles in place of bread. I have to tell you, it was actually phenomenal. This recipe for savory waffles calls for a handful of ingredients you likely already have on hand, and only takes 20 minutes of your time. It’s made with plain Greek yogurt, low-fat milk, shredded cheddar cheese, and a few other basics that come together to create a waffle that’s vibe-adjacent to a flavorful onion bagel—but in the form of a waffle. If you’re feeling curious, no need to wing it. Once you try this recipe, you’ll probably find yourself craving it every other day.

Topping your savory waffles

Think of your savory waffle as a blank canvas. It’s crispy, cheesy, and completely satisfying on its own. But then, the topping possibilities feel endless, and that’s because they are endless.

A fried egg is always a good idea (especially if the yolk is runny, in my opinion), and a swipe of your favorite hot sauce or hot honey butter adds just the right amount of spice. If you’re after something a smidge lighter, try sliced avocado, fresh tomatoes, or a handful of arugula tossed in lemon juice to offer a bright, fresh contrast. You can also add a scoop of cottage cheese, Greek yogurt, or a sprinkle of hemp seeds for added protein. Alternatively, make it a brunch dish with smoked salmon and crème fraîche. Because, well, why not?

How do I store leftovers?

Store your leftover savory waffles in an airtight container in the fridge for up to 3 days. I’ll add that these waffles are best enjoyed immediately, though. You can also store them in a freezer-safe airtight container, such as a freezer bag, for up to 6 months. Just let them thaw out in the fridge overnight before reheating in the toaster, oven, or air fryer.

Serving suggestions

Serve these savory waffles with all your favorite breakfast goodies. When I’m making breakfast for a group, I swear by this recipe for Fried Eggs In The Oven (Sheet Pan), so I recommend you keep that handy. Otherwise, I love these Feta Fried Eggs and these Air-Fryer Fried Eggs for their big flavors and convenience. I can’t help but recommend this Hot Honey recipe because, honestly, I’d put it on just about anything, including these waffles. It’s that good. I also love this lemony and bright Avocado Butter, and it works exceptionally well on savory waffles!

Ingredients

  • 2 large eggs
  • 2 1/2 tablespoons melted butter
  • 1/2 cup low-fat milk
  • 1/2 cup plain Greek yogurt
  • 1 1/2 cups self-rising flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 2 green onions chopped
  • 1 cup shredded cheddar cheese
  • 4 tablespoons grated Parmesan cheese

Instructions

  • In a large bowl, whisk together the eggs, melted butter, milk, and Greek yogurt until smooth.

  • Gradually stir in the self-rising flour, garlic powder, onion powder, and smoked paprika until just combined. Gently fold in the chopped green onions, shredded cheddar cheese, and Parmesan cheese.
