There’s something irresistible about bite-sized snacks. They’re fun to eat and easy to share, no matter your age! These quick and easy gluten-free pizza bites are perfect for grown-up parties, kids’ lunchboxes, and afternoon snacks. They take all the flavors you love on a classic pizza and deliver them in a simple, two-bite treat. Plus, they’re incredibly adaptable to your taste preferences—just like a regular pizza!

I found this recipe after I learned my niece has a gluten sensitivity. I frequently babysit her and a couple of her friends, so I needed snacks they could all enjoy. I didn’t want to draw attention to her situation by giving her something different. I was so delighted that all the ingredients for this recipe were available at my local grocery store—and that it’s so easy to make! After I made it on my own the first time, I enlisted the girls to help assemble their own pizza bites. It has become one of our favorite after-school activities!

Whether you’re looking for a quick appetizer, a kid-friendly kitchen project, or a way to curb pizza cravings without overindulging, these little snacks are sure to be a hit in your household!

Are These Gluten-Free Pizza Bites Healthy

These pizza bites are a lighter, gluten-free alternative to traditional pizza. As a snack or appetizer, the dish offers a good balance of protein, healthy fats, and important nutrients like calcium and vitamin A. Using tomatoes and olive oil boosts the vitamin and antioxidant content, while the cheese provides protein and calcium. However, the bites do contain moderate amounts of saturated fat and sodium, so enjoy them in moderation.

The recipe is gluten-free and vegetarian-friendly as written. For a vegan version, simply swap in your favorite dairy-free spreadable cheese. To make them keto-friendly, use low-carb crackers and a high-fat cheese. For an even healthier twist, try reduced-fat or lower-sodium cheese, and add extra veggies for more fiber and nutrients.

Navigating A Gluten-Free Diet

Living gluten-free can be challenging, especially when it comes to finding snacks that are both safe and tasty—particularly for kids! Gluten can hide in unexpected places, like seasonings, sauces, and even some cheeses. My best advice is to get very comfortable reading every word in ingredients lists on packages. Scanning the allergen statement isn’t enough, as barley and rye are not required to be listed as allergens in the U.S. Not only are you looking for common grains like wheat, barley, and rye, but you’ve also got to know their Latin or scientific names: Triticum vulgare (wheat), Hordeum vulgare (barley), and Secale cereale (rye). Also be on the lookout for malt—often listed on packaging as “malt extract,” “malt flavoring,” or “malted barley”—as well as brewer’s yeast and sneaky gluten-containing fillers and thickeners, like roux and rusk. A gluten-free label is typically a green light, but be especially careful with imported foods that might have looser labeling requirements or unfamiliar ingredient names.

How Do I Store Leftovers?

Store leftover pizza bites in an airtight container, separating layers with wax or parchment paper. They’ll stay good in the fridge for up to 4 days and in the freezer for up to 3 months. To reheat, take directly from the fridge or freezer to a preheated 350°F oven for 8-15 minutes or a 400°F air fryer for 5-7 minutes. Monitor them closely to avoid burning. I like them cold from the fridge, too.

Ingredients

  • 3 small roma tomatoes
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon italian seasoning
  • 3/4 teaspoon garlic salt
  • 1 package soft, spreadable cheese about 5.5 ounces, at room temp
  • 16 large gluten-free crackers of choice
  • Fresh basil optional, for garnish

Instructions

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Cut each tomato into slices about 1/3-inch thick and place on the baking sheet. Rub the tops with the olive oil.

  • In a small bowl, stir together the Italian seasoning and garlic salt. Sprinkle evenly over the tomatoes.

  • Bake until the tomatoes are tender but not falling apart, about 12-13 minutes.
  • Place the cheese in a medium bowl and lightly whip with a fork.
    Cream cheese in a beige bowl, suitable for healthy recipes or meal prep.
  • Spread the whipped cheese over the crackers, top each with a tomato slice and garnish with basil.
