Ingredients
- 3 small roma tomatoes
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon italian seasoning
- 3/4 teaspoon garlic salt
- 1 package soft, spreadable cheese about 5.5 ounces, at room temp
- 16 large gluten-free crackers of choice
- Fresh basil optional, for garnish
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Cut each tomato into slices about 1/3-inch thick and place on the baking sheet. Rub the tops with the olive oil.

- In a small bowl, stir together the Italian seasoning and garlic salt. Sprinkle evenly over the tomatoes.

- Bake until the tomatoes are tender but not falling apart, about 12-13 minutes.
- Place the cheese in a medium bowl and lightly whip with a fork.

- Spread the whipped cheese over the crackers, top each with a tomato slice and garnish with basil.

- Serve immediately.
