Tomatoes, basil, mozzarella—these three simple ingredients will always be an undeniably delicious combination. They can be used in so many different ways, from pizzas and pasta dishes to sandwiches and salads. And when I say salads, I’m really talking about one salad in particular, caprese, which originates from the island of Capri in southern Italy. This traditional Italian salad truly celebrates these ingredients, highlighting their fresh flavors with the addition of olive oil, salt, and pepper.

You really can’t go wrong with simplicity, as this classic trio of tomatoes, basil, and mozzarella has proven through so many delicious dishes. But it turns out this flavor combo is more than versatile—it’s also endlessly customizable. In the case of this recipe, we’ll be welcoming peaches into the mix to create a bright, refreshing salad that’s perfect for summer. I find this recipe to be a great way to highlight fresh, juicy, perfectly ripe summer peaches. I love the extra sweetness they bring to the salad, which is further enhanced by the addition of a balsamic glaze and honey.

This salad makes for a great light appetizer before serving a heartier main course, or you can serve it among other appetizers for shared snacking with friends. Whichever the case, it’s sure to bring sweet summertime vibes to your meal.

What is balsamic glaze?

This recipe calls for balsamic glaze, otherwise known as balsamic reduction, which consists of balsamic vinegar that’s been reduced until it becomes thick and syrupy. As balsamic vinegar boils down, its water evaporates, creating a concentrated version of its tangy flavors and natural sweetness. Sugar isn’t a necessary ingredient in a balsamic glaze (especially since balsamic vinegar is already naturally sweet), but is oftentimes added in the form of white sugar or honey to enhance the taste.

If you’re buying prepackaged balsamic glaze at the store, chances are, sugar is an added ingredient. If you’d prefer to skip the added sugar and make your own, simply simmer 2 cups of balsamic vinegar in a saucepan at medium-low heat for 20-25 minutes. Stir it occasionally, let it cool for 10 minutes once reduced, and you’ll be left with 1/2 cup of balsamic glaze that you can use on a handful of different recipes, including this one, of course.

How do I store leftovers?

Ideally, it’s best to only prepare the amount of salad you know will be consumed, and store any unused ingredients separately in the fridge. However, you can store any leftover salad that’s already prepared by keeping it in an airtight container in the fridge for up to 3 days. Keep in mind it’s best to consume leftovers as soon as possible, since the ingredients will start to soften quickly. If possible, store the basil on top of the salad or in a separate container, as it will wilt when stored with the wet ingredients of the salad.

Serving suggestions

Nothing says summer to me like this salad. During the hotter months, I love eating a combination of fresh, smaller dishes rather than one big meal. More than eating them, I love sharing them with my friends or family. If you’re looking for something to bring to a picnic or barbecue, some of my favorite dishes to serve alongside this salad include Arancini (especially if you want to stick to the Italian vibe), Prosciutto and Melon, Bacon-Wrapped Asparagus, and Cream Cheese-Stuffed Mushrooms. For mains, you can’t go wrong serving this alongside Juicy Grilled Chicken Breast or Air-Fryer Steak.

Ingredients

  • 6 ounces fresh mozzarella cheese sliced 1/2-inch thick
  • 1 peach pitted and sliced 1/2-inch thick
  • 1 large tomato sliced 1/2-inch thick
  • 12 fresh basil leaves
  • Extra virgin olive oil to drizzle
  • Balsamic glaze to drizzle
  • Honey for drizzling
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Arrange the slices on a serving plate in a circular pattern, alternating mozzarella, peach, tomato, and intersperse with basil leaves.
