Any excuse to eat carrots is always a good thing, as they are a fantastic addition to a balanced diet and offer many health benefits. The challenge is finding a way to cook carrots that makes them taste good and encourages you to eat them as frequently as possible. One possible solution to this quandary is this enticing recipe for Parmesan carrots, which adds extra crunch and flavor to make roasted carrots irresistible.

I find this recipe easy to follow and it always yields great results. All you have to do is peel and cut the carrots, coat them with my mixture of spices, and sprinkle Parmesan on top. Roasting the carrots in the oven softens them and enhances their natural sweetness. On top of that, the addition of garlic and pepper brings extra depth to the dish, while the Parmesan creates a crunchy outside that elevates the overall taste. I store leftover Parmesan carrots in an airtight container in the fridge, where they stay fresh for up to 4 days. To reheat, simply place them in the oven at 425 degrees F for about 5 minutes or until warmed through. Enjoy the deliciousness all over again!

Ingredients

  • 1 pound carrots
  • 1 garlic clove minced
  • 2 tablespoons olive oil
  • Kosher salt to taste
  • Black pepper to taste
  • 1/4 teaspoon onion powder
  • 1 tablespoon seasoned breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • Freshly chopped parsley for garnish

Instructions

  • Preheat your oven to 400°F. Peel the carrots and cut them into sticks approximately 3 inches long and 1/2 inch thick.

  • Combine the garlic, salt, pepper, onion powder, and breadcrumbs in a small bowl.
  • In a larger bowl, toss the carrot sticks with olive oil to coat them, then add the seasonings mixture and mix to combine.

  • Transfer the carrots to a lined baking sheet and arrange them in a single layer. Sprinkle grated Parmesan cheese evenly over the carrots.
