Ingredients
- 1 pound carrots
- 1 garlic clove minced
- 2 tablespoons olive oil
- Kosher salt to taste
- Black pepper to taste
- 1/4 teaspoon onion powder
- 1 tablespoon seasoned breadcrumbs
- 1/3 cup grated Parmesan cheese
- Freshly chopped parsley for garnish
Instructions
- Preheat your oven to 400°F. Peel the carrots and cut them into sticks approximately 3 inches long and 1/2 inch thick.

- Combine the garlic, salt, pepper, onion powder, and breadcrumbs in a small bowl.
- In a larger bowl, toss the carrot sticks with olive oil to coat them, then add the seasonings mixture and mix to combine.

- Transfer the carrots to a lined baking sheet and arrange them in a single layer. Sprinkle grated Parmesan cheese evenly over the carrots.

- Bake in the preheated oven for 25 minutes or until the carrots are tender and the cheese is golden. Sprinkle with fresh parsley when serving.
