Yep. If you know any Spanish, it’s exactly what you think it is.
Tomato bread. Toast with tomato. Whatever you call it, it’s SERIOUSLY SIMPLE.
But also, SERIOUSLY DELICIOUS OH MY GOSH.
It’s Spanish food week and we started with cod scrambled eggs on Monday and then a Salmorejo recipe.Today I am introducing you to probably the MOST FAVORITE thing that we ate while we were in Spain. We still make this almost weekly because we just FELL SO HARD.
The only ingredients are:
- Good quality olive oil
See? SRSLY simple, pantry-essential kind of ingredients that you wouldn’t expect to be SO SUPER ADDICTING, but they ARE.
The tomatoes are slightly sweet and SO fresh, with these ribbons of smooth, flavorful olive oil, punchy fresh garlic and this little rice vinegar tang that is honestly SO CRAVE-able you will hardly even believe that you like tomatoes on bread THIS MUCH.
We first discovered Pan Con Tomate (Spanish tomato bread) when we were hangrily looking for somewhere to eat breakfast in Madrid. We came to learn that breakfast isn’t the biggest of deals in Spain – it’s all about dinner – so finding breakfast was tough.
We were just about ready to give up and go grab a muffin from Starbucks (which we did NOT want to resort to) but then we stumbled across a super tiny café and saw everyone eating tomatoes on bread. Since we wanted to act local (which is impossible when you’re as white as a ghost, speak little Spanish and are carrying 50 lb backpacks just FYI) we tried it.
We didn’t expect to be anything taste bud blowing….
But then we ate it almost every single day for breakfast for the 2 weeks we were in Spain.
How to Make Pan Con Tomate
- Grate your tomatoes using a box grater. DO NOT dice them. You want them totally mushy <– I know that sounds gross, but stick with me
- Mix in your olive oil, salt, garlic and vinegar.
- Toast some GOOD bread and spread a medium thick layer of tomato on top
- EAT RIGHT NOW.
Our favorite is to put some Ibérico Ham on top because it’s salty and fatty and delish. It’s the only thing we actually brought back from Spain. You could use ANY cured ham or even prosciutto would be delish!
Or just eat this pan con tomate recipe straight up. All are VERY good options that you will not be mad about.
What Kind of Bread Should I Use?
The type of bread you use to make pan con tomate can make or break your experience. All bread options will taste good, but some will just HIT IT OUT OF THE PARK. You want a good, thick bread. Our top 3 favs are:
- Pumpernickel Rye
- A crusty baguette
- Thick-sliced sourdough
Good bread + Tomatoes = Breakfast.

Pan Con Tomate
- 2 Roma Tomatoes
- 1/2 Tbsp Good quality extra virgin olive oil
- 1 tsp Unseasoned rice vinegar
- 3/4 tsp Fresh garlic, minced
- 1/4 tsp Sea salt
- Good, thick, sliced bread. (GF or paleo if needed)
- Cured ham or Prosciutto (optional)
- OPTIONAL BUT RECOMMENDED: First peel the skin off the tomato. Then, use a box grater to grate the roma tomatoes and place them into a bowl.
- Add in all the remaining ingredients and stir until well mixed.
- Spread onto toasted bread, top with optional ham or Prosciutto, and DEVOUR!
