Add festive yet peaceful vibes to any moment with this guide for crafting Mexico’s most popular tequila-based cocktail!

Paloma Cocktail Photo

Think a margarita is the epitome of Mexican cocktail culture? Think again! The paloma is commonly cited as Mexico’s most popular tequila-based drink. It embodies the country’s laid-back, communal approach to celebration and has become an international symbol of Mexican hospitality, citrus-growing heritage, and festive spirit.

This guide for how to make a perfect paloma is all you need to craft a well-balanced version of the storied drink at home. The word paloma means “dove” in Spanish—and though its exact origins are a mystery, it may refer to the beloved folk song La Paloma, commonly heard in cantinas in the 1950s when the cocktail began appearing.

This recipe maintains the classic ingredients of tequila, salt, and lime juice. But it deviates from the grapefruit soda that was originally used in the drink, with popular brands like Squirt and Jarritos first available in Mexico around the time of the drink’s creation. Fresh grapefruit juice and sparkling water sub in to deliver the signature tartness and fizz without being too sugary.

Reach for this tutorial whenever you want to add a touch of authentic Mexican culture to the moment. Whether it’s a poolside party or a quiet dinner for two, this refreshing cocktail sparks festive yet peaceful vibes.

Tips to perfect your paloma

Start with fresh juice: The bright, vibrant flavors of freshly squeezed grapefruit and lime juice are key to an exceptional paloma. Bottled or concentrate juices tend to be dull, overly sweet, or bitter. Fresh citrus makes the drink much more refreshing.

Customize the sweetness: Simple syrup balances the tart citrus in this recipe. But some prefer the drink a little tangier, while others like a sweeter touch. Adjust the quantity as you mix, starting with just a splash and adding more if needed.

Salt intelligently: A salted rim brings out all the cocktail’s flavors. Use coarse kosher salt for pleasant texture and mild salinity, and rim only half the glass if you want to let guests choose each sip’s saltiness.

Chill everything: Use cold ingredients and ice-packed glasses for crisp, invigorating results.

Experiment with variations: Make a low-carb version by swapping the simple syrup for a few drops of stevia, monk fruit, or another zero-calorie sweetener. Add a spicy kick by muddling thinly sliced jalapeño or serrano pepper in the lime juice before adding other ingredients. Swap tequila for smoky mezcal to add depth and a gentle, earthy edge. Create a sweet-tart twist with lively color by muddling fresh berries, diced pineapple, or a spoonful of mango puree in the glass before adding your base ingredients. Add a sprig of fresh rosemary, cilantro, or mint for an aromatic layer, or toss in a dash of grapefruit or orange bitters for complexity.

How do I store leftovers?

Your perfect paloma has its best flavor and fizz when it’s freshly prepared. But you can store leftovers without ice and garnishes in an airtight container in the fridge for up to 24 hours. I do not recommend freezing a fully assembled paloma, as the fresh citrus and carbonation will quickly degrade.

If you’re batching for a party, you can mix together all the ingredients except the sparkling water and refrigerate in a well-sealed pitcher for up to 5 days—or freeze the uncarbonated mix for up to 1 month. Thaw in the fridge, portion into salt-rimmed glasses, and add fresh sparkling water and garnishes just before serving.

Serving suggestions

Serve your perfect paloma alongside flavorful dishes with Tex-Mex flair. From appetizers like Flautas and Pickle De Gallo to hearty entrées like Baked Tacos and this Cowboy Stew Recipe, this drink completes a south-of-the-border feast. And don’t forget the Sopapillas for a sweet finish!
