My aunt first introduced mini pancakes to me when I was little. I used to sleep over at her house and would wake up to the sweet scent of pancakes cooking on the stove. How Mini Are They, Really?

Compared to regular-sized pancakes, which are typically four or five inches in diameter, mini pancakes are about half that size. And they can be made even smaller!   • 1 1/2 tablespoons granulated sugar
  • 2 1/4 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2/3 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter melted (plus more for cooking)
  • 3/4 teaspoon vanilla extract

  • In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
