London Broil Instant Pot delivers a mouthwatering meal that’s fancy enough for guests but simple enough for busy weeknights!

Most of us would say “yes” in a heartbeat to a delicious home-cooked meal that feels upscale but doesn’t take forever to prepare. Case in point: this London broil Instant Pot recipe. Plus, if you marinate the meat in advance, the Instant Pot does most of the work. Yet the taste of the meat will make your guests think you were stuck in the kitchen all day!
The marinade for this recipe is filled with a wide array of flavors, from soy sauce to lemon juice. The mushrooms add an earthy flavor and texture to the dish. Most importantly, the meat comes out tender. It will almost melt in your mouth, which is what lovers of London broil tend to expect. That’s one of the many reasons why I love this recipe. I can enjoy a great meal without having to spend hours cooking it.
Is London Broil Healthy?
From a health standpoint, London broil in an Instant Pot has pros and cons. The meat itself is an excellent source of protein. Thanks to its diverse collection of ingredients, this recipe also provides a good dose of potassium, vitamin C, and other nutrients. Unfortunately, this dish is also a little high in fat, cholesterol, and sodium. Therefore, this meal should be enjoyed in moderation.

Marinate, Sear, And Rest
While the Instant Pot does most of the cooking, you can do a few things to maximize the flavor of your London broil. First, allow the meat to marinate—overnight if possible. I’d also recommend searing the meat for two minutes on each side. This helps seal the juices and enhance the flavor. Finally, let the meat rest for about 10 minutes after cooking. Doing this will help to redistribute the juices and ensure the meat is tender.

How To Make Ahead And Store
If you have leftover London broil, allow it to cool completely and store it in an airtight container. In the fridge, it should remain good for up to 3 days. You can also freeze it by wrapping it first in plastic, then aluminum foil, and placing it in a freezer-safe container. It should last for up to 3 months. Let it thaw overnight in the fridge before reheating.

Serving Suggestions
Green vegetables are usually my favorite side dish to serve with London broil. Typically, I like to go with Parmesan-Roasted Broccoli or Air-Fryer Asparagus. I’ve also found carrots to be a good complement, especially Cumin-Roasted Carrots or Honey-Glazed Carrots. Of course, there is nothing wrong with a traditional meal of meat and potatoes. I like to go with Parmesan Potatoes, although Cheesy Baked Potatoes can be a good option, too.

Ingredients
- 1/2 cup olive oil
- 1/3 cup soy sauce
- 1/4 cup lemon juice
- 1/4 cup Worcestershire sauce
- 4 cloves garlic minced
- 2 tablespoons Italian seasoning
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 pounds top-round or flank steak (commonly used for London broil)
- 1 tablespoon olive oil for sautéing
- 1 yellow onion sliced
- 8 ounces mushrooms sliced
- 1 cup beef broth
Instructions
- To create the marinade, combine olive oil, soy sauce, lemon juice, Worcestershire sauce, minced garlic, Italian seasoning, pepper, and salt in a bowl.
- Place the beef in a large resealable bag or container, and then pour the marinade over the meat. Refrigerate for at least 2 hours, preferably overnight.

- Set the Instant Pot to 'Sauté' mode and heat a tablespoon of olive oil. Add the sliced onion and mushrooms and brown slightly before setting aside.
- Next, add the marinated beef and sear each side of the meat for about 2 minutes, until browned.

- Add beef broth and return onions and mushrooms to the Instant Pot, using a wooden spoon to scrape up any browned bits from the bottom. This will prevent burning and add flavor.
- Secure the lid of the Instant Pot and set it to Manual / High Pressure for 12–15 minutes (about 12 minutes for medium‑rare, 15 minutes for medium). After cooking, allow the pressure to release naturally for 10 minutes, then quickly release any remaining pressure.

- Remove the beef and let it rest for 5 minutes. Then, slice the meat thinly against the grain and serve warm.
