This recipe was a difficult one to write. Not because I was stumped with what to write. No, I mean it was literally difficult to write because I was trying to come up with an enticing post while also enjoying this enticing meal. After one bite, I rushed to my laptop, ready to write a love letter to these potatoes. I just couldn’t wait. That’s how good they are. There’s just something about this dish that is so inviting. Is it the melted cheese? The golden, crisp, yet fluffy potatoes? I think it’s all that and more.

Well, I quickly came to my senses, closed the laptop, and focused on enjoying every bite instead. Smiling and satisfied, I returned to finish this post, so that you too can learn how to make a pan of cheese-covered, carby goodness. Whether served alone or as a side, these cheesy potatoes are so delicious and easy to whip up, that you’ll find yourself making them again and again.

These decadent potatoes also offer plenty of room for creativity. Go ahead and add any ingredients you like. Crumbled bacon, fresh herbs, onions, mushrooms, different cheeses—the possibilities are endless! When it comes to making these delightfully gooey potatoes, you really can’t go wrong.

Are These Cheesy Stuffed Baked Potatoes Healthy?

Potatoes are high in carbs but also very low in fat, filling, and a good source of vitamin C and potassium. That said, this dish does not skimp on the cheese, which is high in calories and saturated fat. To make the dish a little lighter, you can use a low-fat cheese, but a better option would be to enjoy this dish in moderation. To boost the meal’s nutritional profile, serve the potatoes with a crisp, green salad or a side of sautéed veggies. This dish is suitable for vegetarian and gluten-free diets. Vegans or those who are lactose intolerant can use a quality plant-based cheese.

Can I Use a Different Type of Potato?

Different potatoes have different characteristics, each bringing a unique texture to a dish. In this recipe for cheesy baked potatoes, I’ve used red potatoes because they’re low in starch and hold their shape well when cooked. Their firm, creamy texture makes them perfect for baking. They won’t fall apart and will deliciously soak up all that cheesy goodness. You can also use russets, which are high in starch and result in a fluffier texture, or Yukon Golds, known for their buttery, creamy consistency. Yukon Golds also crisp up beautifully when cubed. All of these varieties taste outstanding when smothered in melted cheese.

How Do I Store Leftovers?

Once cooled, store any leftovers in an airtight container in the fridge. They will keep well for 3-4 days. Additionally, you can freeze cheesy baked potatoes in a freezer-safe container for up to 3 months. Thaw in the fridge overnight. The potatoes can be reheated in the oven at 375°F for 10-15 minutes.

Serving Suggestions

Like pretty much any potato dish, this one is quite versatile. If you want some meat worked in, add cooked bacon bits, diced ham, leftover Roasted Chicken, or crumbled sausage (try this recipe for a tasty breakfast sausage option!).

Ingredients

  • 3 medium red potatoes chopped into 1/2- to 3/4-inch pieces
  • 1 tablespoon coconut oil melted
  • 1 teaspoon garlic flakes
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat the oven to 400°F. Lightly coat a baking sheet with nonstick spray.
  • Pat the chopped potatoes dry with a paper towel to remove excess moisture.

  • In a large bowl, toss the potatoes with melted coconut oil and sprinkle with garlic, parsley, salt, and pepper.
  • Spread the seasoned potatoes in a single layer on the prepared baking sheet, allowing space for even cooking.

  • Bake in the preheated oven for 25 minutes, stirring occasionally, until the potatoes are golden brown. For extra crispiness, broil for an additional 2-4 minutes, but keep a close eye to prevent burning.
  • Remove the potatoes from the oven, sprinkle with shredded mozzarella cheese, and return to the oven for 3-4 minutes, or until the cheese is melted and bubbly.
