Salmon has always seemed like an upgrade to me. Not to knock tuna, but once you’ve fallen in love with salmon and its versatile goodness, you’ll see what I mean. Salmon is easy and quick to make, tasty, and healthy—what’s not to love?
These crisp, golden patties are a great way to use leftover salmon. Though in all honesty, I’m not sure if I know what that is!
You’re going to love the hearty texture and flavor of these puck-sized delights. They’re suitable for keto diets, but since they use almond rather than wheat or white flour, they’re also gluten-free. I really love their tender crumb and melt-in-the-mouth texture. Who knew a simple patty could be so delectably tempting!

How to Make Ahead and Store
These salmon patties are versatile in their preparation and storing options. They can be mixed, formed into patties, then stored in the fridge for 3-5 days before cooking.
After cooking, while they’re best eaten straight away, leftovers can be stored for up to 3 days in the fridge before reheating in a hot skillet (preferably covered). Leftovers are fine to eat cold, too. Cooked patties can also be cooled and then frozen in a freezer-safe container for up to 3 months. Thaw overnight before cooking.

These salmon patties can be eaten with a fork, or wrapped in a large lettuce leaf to keep it keto. They can also be placed on a toasted bun (for a non-keto option) with all the condiments desired. Personally, I like them wrapped in crispy lettuce, with a slice of juicy beefsteak tomatoes, and a dollop of creamy mayonnaise. Yum! - 15 ounces canned salmon drained
- 1/2 cup almond flour
- 2 large eggs beaten
- 3 tablespoons mayonnaise
- 1/4 cup finely chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil for frying
Instructions
- In a mixing bowl, combine the drained salmon, almond flour, eggs, mayonnaise, parsley, salt, and pepper. Mix thoroughly until well combined.

- Form the mixture into 8 equal-sized patties.

- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 3-4 minutes on each side, or until golden brown and crispy.
