These Instant-Pot Artichokes are so easy to make! You’ll be serving up a tasty and elegant dish with a method that’s foolproof and fuss-free!

Artichokes are one of the most interesting vegetables to me. If I see them as a starter on a restaurant menu, chances are I’ll order them. There’s just something about dipping those petals into melted butter—or better yet, a zesty lemon-pepper mayo—and savoring each tender, delicate bite as you scrape the meat off with your teeth. And of course, the ultimate reward: reaching the succulent heart after peeling back the last petal!
Truth be told, however, I always found them a little intimidating and wasn’t quite sure how to cook them. That all changed once I discovered the magic of the Instant Pot. Now, it’s practically foolproof, giving me perfectly tender artichokes every time. Not only does the Instant Pot make it easy, but it also cuts the cooking time down significantly—what used to take 35 to 45 minutes on the stovetop, is now done in just 15 minutes.

You’ll love serving these artichokes as a snack or fancy appetizer. Their nutty, earthy taste makes them a perfect match for all kinds of delicious dipping sauces. Talk about fun and chic food!

Are Instant-Pot Artichokes Healthy?

Yes! Artichokes are low in calories, high in fiber, and a good source of vitamins and minerals. Artichokes are usually served with melted butter or a rich dipping sauce, but if you’re watching your fat intake, a spritz of lemon juice is also delicious.

How to Choose an Artichoke

When buying artichokes, they should feel heavy and firm. The leaves should be dark green, tightly closed, and they should squeak when rubbed together. Larger artichokes will have bigger hearts (the best part!), but smaller ones tend to be sweeter and have a more tender flesh.

How to make ahead and store

Since this vegetable is so incredibly easy to make, I’d suggest enjoying it fresh. You can store the cooked, cooled artichokes in an airtight container in the fridge for up to 5 days. To reheat them, steam them for a few minutes or warm them up in the microwave. They’re also great cold.

Serving Suggestions

Although these instant pot artichokes are absolutely delicious all on their own as a fancy appetizer, they are also great as a side dish. I recommend serving them alongside some Bacon-Wrapped Chicken Thighs or Air-Fryer Pork Tenderloin with a side of Purple Mashed Potatoes or Roasted Russet Potatoes.

Any way you decide to serve these artichokes, they are sure to be a hit!

Instant Pot Artichokes

Ingredients

  • 2 large artichokes
  • 2 cups water
  • 1 tablespoon garlic minced
  • 1 teaspoon salt
  • 1 Bunch of parsley

Instructions

  • Wash and dry your artichokes and then cut about 1 inch off the top to expose the inside.

  • Pull off any dry, dead leaves from the outside and discard. Using kitchen shears, snip off the tip of each leaf.

  • Pour the water in your Instant Pot and stir in the garlic and salt.

  • Place the trivet inside and place the parsley inside, pushing it to the side. Then, place your cleaned artichokes in the pan, cut side down.

  • Cover, set the pot to seal, and cook at manual high pressure for 15 minutes. Let steam release naturally.

  • Use a knife to poke the bottom of the artichoke. If it goes in easily, it's done!

  • Dip the leaves in melted butter or your favorite sauce and enjoy!
