Ingredients

  • 2 large artichokes
  • 2 cups water
  • 1 tablespoon garlic minced
  • 1 teaspoon salt
  • 1 Bunch of parsley

Instructions

  • Wash and dry your artichokes and then cut about 1 inch off the top to expose the inside.
  • Pull off any dry, dead leaves from the outside and discard. Using kitchen shears, snip off the tip of each leaf.
  • Pour the water in your Instant Pot and stir in the garlic and salt.
  • Place the trivet inside and place the parsley inside, pushing it to the side. Then, place your cleaned artichokes in the pan, cut side down.
  • Cover, set the pot to seal, and cook at manual high pressure for 15 minutes. Let steam release naturally.
  • Use a knife to poke the bottom of the artichoke. If it goes in easily, it's done!
  • Dip the leaves in melted butter or your favorite sauce and enjoy!
