Say “hello” to one of my favorite recipes; it’s simple, naturally sweet, and luxurious. With only two ingredients, almond butter is easy and affordable to make. It goes great with breakfast, snacks, or dessert. Plus, you have complete control over the ingredients, so the creative flavor opportunities are abundant—which we’ll explore soon!

I especially like making this recipe with children because it’s an easy, fun way to introduce them to healthy nut butters and the wide variety of foods you can put them on. It’s also a great meal prep ingredient, as you can make a big batch and store it for quite a while. Just make sure to label each jar with its type, flavor, and the date you made it, and seal it well. You’ll be amazed how even just a little bit goes a long way…

Is Almond Butter Healthy?

Generally, almond butter is considered one of the healthiest nut butters. Almonds are rich in fiber, protein, healthy fats, vitamins, and minerals. This makes them not only flavorful, but satisfying and nourishing. With a dynamic nutrition profile like this, these nuts are nothing to sniff at.

While this recipe is gluten-free, sugar-free, and vegan, it still has salt in it, so if you follow a low-sodium diet, simply make it without salt. Don’t worry; it will still be delicious, especially if you add an aromatic spice like cinnamon or cardamom.

Almond skins can be hard to digest for some people, so I often use blanched almonds instead of roasted (or blanch them myself by soaking them in warm water overnight and then removing the skins). This can also lead to creamier, lighter butter.

Is Almond Butter a Good Bedtime Snack?

If your bedtime snacks are keeping you up at night, I recommend eating almond butter instead. It’s a nutrient-dense food that provides healthy fats, protein, and fiber, which can all help you feel full and satisfied, preventing hunger from disrupting your sleep.

How to make ahead and store

Once prepared, almond butter can last up to 2 weeks in the refrigerator. I recommend sealing it well in a mason jar to preserve its freshness. When you’re ready to use it, give it a good stir with a spoon or fork as the oil and solids might separate in the jar over time.

Serving Suggestions

While you could put this golden brown goodness into nearly any dish, here are some especially mouthwatering options…

While almond butter classically goes good on plain toast, I also recommend trying it on something luscious like Healthy French Toast or Banana Chocolate Chip Pancakes.

A fresh and summery choice would be the Banana Split Vegan Smoothie—like a burst of sunshine! Similarly, this butter can be used as a dip for fresh fruits or veggies of any kind.

Lastly, it might sound strange, but my favorite dessert of all time is purple sweet potatoes topped with cinnamon almond butter—so simple yet so decadent!

Ingredients

  • 16 ounces raw almonds
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Spread the almonds on a large baking sheet and toast for 10 minutes, stirring halfway through.

  • Allow the toasted almonds to cool until they are just warm, about 10 minutes.
  • Transfer the warm almonds to a high-speed blender or food processor. Process until the almonds transform from coarse crumbs to a smooth, creamy butter, scraping down the sides as needed. This process may take several minutes.

  • Once smooth, add the salt and blend briefly to distribute evenly. Transfer the almond butter to a clean jar and seal tightly.
