This warm potato dish has definitely earned itself a spot on American comfort food lists, and frozen hashbrowns became all the rage in the 1950s and 1960s when convenience foods increased in popularity across the nation.

Although there are several great recipes for making hashbrowns from scratch – like these Air Fryer Hashbrowns – you can’t beat the convenience of frozen hashbrowns when whipping up a quick hashbrown casserole!

This hashbrown casserole is a comfort dish. In terms of health, it’s not exactly a top choice, but dinnertime doesn’t always have to be healthy!

To make this dish healthier, you can make a few common swaps like trading sour cream for unsweetened Greek yogurt, making your own hash browns from scratch, and making your own cream of chicken soup from scratch. Small alterations like this can boost the protein content, lower the fat content, or reduce the amount of processed ingredients in the recipe, so every little swap helps!

Ingredients

  • 30 ounces frozen shredded hash browns thawed
  • 1/3 cup unsalted butter melted
  • 10 ounces condensed cream of chicken soup
  • 16 ounces sour cream
  • 1/2 cup onion finely chopped
  • 2 cups shredded cheddar cheese
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
  • In a large bowl, mix together the thawed hash browns, melted butter, cream of chicken soup, sour cream, chopped onion, 1 1/2 cups of the cheddar cheese, and black pepper until well combined.
