Expect a lot of oohs and aahs when you bring this cheesy, delicious Ground Turkey Enchilada Skillet to the table!

Imagine putting a complete meal on the table in about 30 minutes, and all in one skillet. That’s precisely what you get with this mouthwatering ground turkey enchilada skillet. This recipe comes together so quickly and easily—I’m sure you’ll want to add it to your meal rotation.

Don’t be put off by the lengthy ingredient list. Olive oil, onions, seasonings, garlic, salsa, and cheese—I bet many of these are already in your kitchen. Of course, you’ll still need to stop by the grocery store for the ground turkey, frozen cauliflower rice, black beans, enchilada sauce, corn kernels, and corn tortillas. But trust me when I say that it’s worth it!

Speaking of ingredients, I prefer using chunky salsa for this recipe. Not only is it more flavorful, but it also helps prevent the dish from becoming too watery. Sliced black olives are a great addition too, if you want to add more variety to your meal, as is shredded zucchini. You can also stir in some extra cheese before sprinkling it on top. After all, if you love cheese as much as I do, you can never get enough!

One skillet, endless combos

Skillet meals are easy to customize, using whatever ingredients you have on hand. This ground turkey enchilada skillet recipe is no different. For example, a combination of red, yellow, and orange bell peppers adds colorful variety to the dish. Or try using red or green enchilada sauce, along with cheddar, Mexican blend, or Monterey Jack cheese.

Additionally, swap the black beans with pinto or kidney beans. For more veggies, opt for riced cauliflower or broccoli—both are low-carb! A drizzle of Avocado Crema or guacamole can serve as a creamy substitute for the avocado.

You can also use ground chicken, beef, pork, or lamb. Cooked shredded chicken, beef, or pork is another option. For a vegetarian option with plant-based protein, consider tofu, tempeh, lentils, quinoa, or an additional can of beans.

How do I store leftovers?

Allow leftovers to cool before refrigerating in an airtight container for up to 4 days. You can also transfer the leftovers to a freezer-safe container and freeze them for up to 3 months. Reheat the (thawed) leftovers on the stove or in the microwave. You may need to add more salsa or enchilada sauce if it becomes dry, as the ingredients may absorb the sauce.

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 1 red bell pepper diced
  • 1 pound lean ground turkey
  • 3 garlic cloves minced
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 10 ounces frozen cauliflower rice
  • 1 can black beans (15 ounces) drained and rinsed
  • 1 can enchilada sauce (15 ounces)
  • 1/2 cup corn kernels fresh or frozen
  • 1 1/4 cups salsa
  • 5 small corn tortillas cut into strips
  • 3/4 cup shredded cheese Mexican blend or cheddar
  • Fresh cilantro chopped, for garnish
  • Diced or sliced avocado for garnish, optional
  • Sliced jalapeños for garnish, optional

Instructions

  • Heat olive oil in a large nonstick skillet over medium-high heat. Add diced onion and red bell pepper. Sauté until softened, about 4 minutes.

  • Incorporate ground turkey and garlic. Season with cumin, chili powder, salt, black pepper, onion powder, and oregano. Cook until the turkey is browned, approximately 5-7 minutes, breaking it into crumbles.
