A refreshing Cucumber Salsa recipe perfect for the summertime!

They don’t make salsa like they used to—I mean this in a good way. Years ago, grocery stores only carried a small selection. Nowadays, there are all sorts of options. Of course, the best ones are homemade, like my new favorite recipe, cucumber salsa.

The simplicity of this salsa is definitely one of the reasons why I love this recipe. After all, if you can chop vegetables, you can make salsa! It only takes 10 minutes to prepare, and after a half-hour in the fridge, this salsa is good to go.

So, what makes this salsa so special? Like any other recipe, it all comes down to taste. It’s simply refreshing, especially on a hot summer afternoon. The crisp cucumbers and tangy tomatoes balance out the spiciness of the jalapeño, while the zesty lime juice brings everything together. If you’re like me, you’ll get hooked on this stuff after just a few scoops!

Is This Cucumber Salsa Healthy?

Cucumber salsa is delicious and nutritious. It’s made with fresh vegetables that are filled with vitamins and minerals. Even better, this recipe is low in fat, calories, and sugar. In other words, it’s excellent for any diet and practically guilt-free.

A Little Extra

Homemade salsa always has room for one or two extra ingredients. For instance, mangos and kiwis are excellent options if you’d love a touch of sweetness. I’m also always a fan of adding an extra crunch—sprinkle in some finely chopped radishes or bell peppers. They blend in perfectly with this salsa’s color and texture.

You can also play around with the salsa’s spice levels. While the recipe calls for a jalapeño, a mild poblano pepper provides flavor without the kick. Alternatively, a serrano dials up the heat if you really want to feel it!

How Do I Store Leftovers?

If you don’t finish the salsa in one sitting, cover it in a bowl and leave it in the fridge for up to 2 days.

Serving Suggestions

My first couple of recommendations should come as no surprise—homemade Fried Tortilla Chips are perfect for this salsa. And for the low-carb eaters, try these Keto Tortilla Chips. Consider sprinkling a spoonful of cucumber salsa on your Shrimp Tacos or Turkey Burrito Bowl. This salsa also tastes delicious on a plate of these Healthy Nachos. Lastly, top it on some Cajun Grilled Cod for a delightful contrast.

Cucumber Salsa

Ingredients

  • 2 cups cucumbers diced
  • 2 cups tomatoes diced
  • 1 shallot finely chopped
  • 2 cloves garlic minced
  • 1/2 cup chopped cilantro
  • 1 jalapeño pepper diced
  • 5 tablespoons lime juice
  • 1/2 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  • In a large bowl, combine cucumbers, tomatoes, shallots, garlic, cilantro, jalapeños, lime juice, olive oil, salt, and black pepper. Toss to mix well.

  • Cover the bowl and refrigerate for 30 minutes to allow flavors to meld.
