Ingredients
- 2 cups cucumbers diced
- 2 cups tomatoes diced
- 1 shallot finely chopped
- 2 cloves garlic minced
- 1/2 cup chopped cilantro
- 1 jalapeño pepper diced
- 5 tablespoons lime juice
- 1/2 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- In a large bowl, combine cucumbers, tomatoes, shallots, garlic, cilantro, jalapeños, lime juice, olive oil, salt, and black pepper. Toss to mix well.

- Cover the bowl and refrigerate for 30 minutes to allow flavors to meld.

- Serve the chilled salsa with tortilla chips or as a topping for tacos, salads, or grilled dishes.
