Zesty and bright, this Carrot Ginger dressing is a sure delight!

Cloudy yellow with a tint of orange, this dressing makes one beautiful sauce and is great for not just coating salads but for using as a tasty dipping sauce and seasoning. If you are like me, then you always order or ask for extra sauce, no matter the cost. Okay, maybe not at any cost but you know what I mean. The most flavorful foods are seasoned just right. The magic is in the sauce. And getting the flavor just right is half the battle – it’s in the frosting not always the cupcake if you catch me. This blended sauce is a sure delight and a must-try!

Is Carrot Ginger Dressing Healthy?

With just six simple ingredients (not including the salt), this dressing is as clean as it gets. It incorporates fresh vegetables, oils and spices, featuring minerals and essential vitamins for your body’s overall health. And since it is made from scratch, it is free from extra additives and preservatives that are often found in store-bought dressings and sauces. It’s as bright, zesty and fresh as it gets. This recipe is plant-based, gluten-free, and soy-free; making it suitable for various dietary needs. Oh, and it’s refined sugar-free, too. Overall, the nutrient-dense ingredients make it a very healthy choice.

Can you Swap the carrot?

The base of this recipe is wonderful, because you can essentially swap the carrot for just about any other ingredient. Replace your carrot with mango for a deliciously sweet and savory mix. Lemon is also a great replacement for the carrot, offering a lighter texture. Dijon mustard pairs well with this base, and gives it a more smooth texture. Want to incorporate more greens? Transform this dressing into a vibrant green and add spinach in replacement, transforming the color from soft yellow to shades of green. The colors and variations are endless. How to make ahead and stores

Carrot Ginger Dressing

Ingredients

  • 1 large carrot peeled and roughly chopped
  • 2 tablespoons fresh ginger peeled and chopped
  • 1/4 cup rice vinegar
  • 2 tablespoons honey
  • 1 teaspoon toasted sesame oil
  • 1/2 cup olive oil
  • Salt to taste

Instructions

  • Combine the carrot, ginger, rice vinegar, honey, and sesame oil in a blender.

  • Blend until smooth, then slowly add the olive oil while continuing to blend.
