This Buffalo Chicken Salad offers a spicy, healthy twist on a classic, delivering bold flavors and low carbs.

If I could eat one thing every day for the rest of my life, it would definitely be Buffalo chicken anything. I have almost annoyingly overstated my love for Buffalo sauce. Be it traditional deep-fried wings, wings made in the air fryer, or Buffalo cauliflower bites served with some kind of Buffalo dip, I just love it! Now that I have established my credibility, let’s discuss this Buffalo chicken salad.

This recipe captures the flavor of Buffalo wings in every bite. Also, you know the carrots and celery typically served on the side of Buffalo wings? They’re INSIDE this salad, too! Even better, this Buffalo chicken salad comes together so easily that you’ll find yourself making it again and again.

Use a food processor to prep the ingredients quickly, then mix in the sauce—just Greek yogurt, mayo, Buffalo sauce, and garlic powder. Done! Honestly, it’s perfect for summer lunch. Serve it as a lettuce wrap, on some crunchy rye or wheat toast, or as sliders for a get-together.

Is This Buffalo Chicken Salad Healthy?

With almost 30 grams of protein and only 4 grams of carbs, this Buffalo chicken salad is fairly healthy. Chicken is a good source of lean protein, while the fresh veggies pack a punch in vitamins, minerals, and antioxidants. To keep the Buffalo sauce on the lighter side, I used a combo of Greek yogurt and low-fat mayonnaise. You could always opt for a low-fat Greek yogurt too, if you wanted to reduce fat and calories even more.

Eaten by itself or out of a lettuce cup, this Buffalo chicken salad is also a keto and low-carb eater’s dream come true. It’s gluten-free, too!

DIY Buffalo Sauce

Since this Buffalo chicken salad is almost too easy to make, give yourself something to do in the kitchen by making your Buffalo Sauce from scratch. For the ingredients, all you need is hot pepper sauce, butter, vinegar, cayenne pepper, Worcestershire sauce, and garlic powder. It is super easy and doesn’t include additives and extra sugar like so many other store-bought condiments.

Once you have a batch of homemade Buffalo sauce, you can use it on more than just this salad! It’s great on wings, burgers, mac and cheese, and so much more.

How Do I Store Leftovers?

Keep your leftover Buffalo chicken salad in an airtight container in the fridge for up to 4 days. If you’re using it to make sandwiches or lettuce cups, try to store those ingredients separately so they don’t get soggy.

Serving Suggestions

This Buffalo chicken salad is perfect in a lettuce wrap or piled on top of your favorite toast. If hosting a larger group of friends, serve your salad on slider buns or homemade crackers. My go-tos are these Homemade Ritz Crackers and these crunchy Flaxseed Crackers. While there is some creaminess in the salad, no Buffalo bite is complete without Blue Cheese Dip or Homemade Ranch Dressing. And don’t forget to serve your Buffalo chicken salad with a crispy side like Keto French Fries!

Ingredients

  • 3 cups cooked shredded chicken
  • 1/2 cup celery diced
  • 1/2 cup carrots shredded
  • 1/4 cup red onion finely chopped
  • 1/3 cup plain Greek yogurt
  • 1/4 cup light mayonnaise
  • 1/4 cup Buffalo sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Romaine lettuce leaves or wraps for serving

Instructions

  • In a large bowl, combine shredded chicken, diced celery, shredded carrot, and finely chopped red onion.

  • In a separate small bowl, whisk together Greek yogurt, light mayonnaise, Buffalo sauce, and garlic powder until smooth. Season with salt and pepper to taste.
