This fresh-from-the-garden meal is as visually stunning as it is delicious—and it’s ready in under a half hour.

I love pasta and enjoy experimenting with different sauces. Many of my favorites require numerous preparation and cooking steps—but not this recipe! The only cooking you have to do for bruschetta pasta is boiling the pasta. Everything else mixes in a bowl, and all you have to do is combine everything for a quick, tasty meal.

You already know that bruschetta is a mixture of chopped tomatoes, garlic, and basil atop a warm piece of crusty bread. This recipe skips the bread in favor of pasta for a light dinner that’s basically summer in a bowl. You get the earthy acidity of tomatoes, the savory sweetness of red onions, and the slightly peppery taste of basil in every bite. The tang of Parmesan cheese brings it all together—and I like mine with a hint of heat from crushed red pepper flakes.

Plus, this dish goes from prep to table in less than 30 minutes. It’s perfect for those warm days when you don’t want to turn on the oven, but you still want a comforting and satisfying dinner.

Changing the pasta shapes in this recipe makes it fun and interesting every time. Spaghetti this week, penne next week, maybe ziti, linguine, or rotini in the future. Orzo is also a good choice for something a little different.

The secret to a delicious bruschetta

Bruschetta primarily consists of tomatoes, so the secret to excellence lies in picking beautifully ripe ones. They should not be hard or mushy. Firm to the touch with a slight give is perfect. A pale color is a sign that the tomatoes may not be ripe. Bright red cherry, grape, or plum tomatoes are ideal. Heirloom, Roma, and beefsteak tomatoes also make excellent bruschetta.

Since heirloom tomatoes come in various shapes and colors, using them in this pasta can make for a visually stunning appearance. If heirloom tomatoes are in season, go for an assortment of hues, like yellow, red, purple, and green. Just be careful that they don’t feel overripe, as that will yield too much liquid.

How do I store leftovers?

I store leftover bruschetta pasta in an airtight container in the fridge for up to 3 days—but try to enjoy it within 24 hours, as the tomatoes and basil may become softer and release liquid over time. This dish does not freeze well, as I’ve found the fresh ingredients lose their texture.

You can enjoy leftovers cold, at room temperature, or gently reheated (briefly in the microwave or on the stovetop). Before serving, give the pasta a good stir to redistribute any juices. And keep in mind that the basil may darken and the tomatoes may become softer, but the flavors will still be delicious.

Serving suggestions

Bruschetta pasta can be a meal by itself or topped by your desired protein. It also pairs beautifully with toasted Muffuletta Bread and a bowl of Green Pea Soup or a light, crispy Kale Salad. Or make it the side dish for a vegetarian-friendly meal of Broccoli Tofu Stir-Fry. Omnivores might like this pasta alongside Fish Fingers or Potato Chip Chicken.

Ingredients

  • 8 ounces pasta spaghetti, penne, or your favorite type
  • 2 cloves garlic minced
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons red onion finely diced
  • 1 1/2 tablespoons balsamic vinegar
  • 2 cups fresh tomatoes chopped
  • 1/3 cup fresh basil leaves roughly chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/2 cup Parmesan cheese grated, optional
  • Crushed red pepper flakes optional

Instructions

  • Bring a large pot of water to a boil. Add a generous pinch of salt and 8 ounces of pasta. Cook until al dente, about 8-10 minutes. Reserve 1/4 cup of the pasta water. Drain the cooked pasta and set aside.

  • In a large bowl, mix the minced garlic, extra virgin olive oil, onion, balsamic vinegar, chopped tomatoes, and basil. Season with salt and freshly ground black pepper.

  • Add the hot pasta to the bowl with the tomato mixture. Toss thoroughly to coat, adding reserved pasta water as needed to loosen the sauce.
