Ingredients
- 8 ounces pasta spaghetti, penne, or your favorite type
- 2 cloves garlic minced
- 3 tablespoons extra virgin olive oil
- 3 tablespoons red onion finely diced
- 1 1/2 tablespoons balsamic vinegar
- 2 cups fresh tomatoes chopped
- 1/3 cup fresh basil leaves roughly chopped
- Salt to taste
- Freshly ground black pepper to taste
- 1/2 cup Parmesan cheese grated, optional
- Crushed red pepper flakes optional
Instructions
- Bring a large pot of water to a boil. Add a generous pinch of salt and 8 ounces of pasta. Cook until al dente, about 8-10 minutes. Reserve 1/4 cup of the pasta water. Drain the cooked pasta and set aside.

- In a large bowl, mix the minced garlic, extra virgin olive oil, onion, balsamic vinegar, chopped tomatoes, and basil. Season with salt and freshly ground black pepper.

- Add the hot pasta to the bowl with the tomato mixture. Toss thoroughly to coat, adding reserved pasta water as needed to loosen the sauce.

- Allow to sit for 5 minutes to let the flavors meld. Top with grated Parmesan cheese and red pepper flakes if desired. Serve warm.
