Baked Apple Oatmeal

Combining oatmeal and apples sounds like it’d be a great way to start the day. But what if you could turn that into a tasty dessert? That’s exactly what you get with this recipe for baked apple oatmeal. Frankly, you could make this recipe for breakfast or dessert, and it would work equally well. Either way, this is a sweet and delicious dish that’s guaranteed to be a crowd-pleaser.

Baked apple oatmeal almost tastes like an oatmeal cookie. There is honey and cinnamon to give it the sweetness of a cookie. But you also have the tart taste of an apple and the crunch of pecans, as well as the chewiness of dried cranberries. It’s an almost unbelievable mixture of tastes and textures that few other dishes can provide.

Is Baked Apple Oatmeal Healthy?

This dish can be a good source of fiber, protein, iron and vitamins. That being said, the levels of sugar and saturated fat might be a concern for some people. After all, this is meant to be a sweet dish. If you’re worried about the sugar or calories, simply enjoy this dish in moderation.

Slice and Spread

To make the best baked apple oatmeal possible, I recommend dicing the apple pieces as finely as you can. This will help them cook faster and come out nice and soft. You can also peel the apples before slicing them if you want to create a smoother texture. I would also suggest making an effort to spread the apple evenly throughout the mixture so that every bite has some apple in it. The same can be said of the cranberries and pecans to ensure that all ingredients are evenly distributed.

How to make ahead and store

For leftovers, allow the baked apple oatmeal to cool and then cover it with plastic wrap or foil. If stored in the fridge, it should remain good for up to 7 days. To reheat it, place a slice in the microwave for 30 to 60 seconds.

Serving Suggestions

As a dessert, I would recommend a slice of vanilla ice cream to go with your baked apple oatmeal. But if this is a breakfast dish, there are plenty of ways to complement it. For instance, an egg-based dish like a Breakfast Quiche will pair nicely.

Ingredients

  • 2 cups rolled oats
  • 1 large apple diced
  • 2/3 cup unsweetened applesauce
  • 1/2 cup milk
  • 2 large eggs
  • 1/3 cup honey
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter melted
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • Brown sugar for sprinkling optional
  • Fresh apple slices for garnish optional

Instructions

  • Preheat the oven to 350°F. Grease a square baking dish (such as an 8 or 9-inch pan).
  • In a large bowl, combine oats with cinnamon, ginger and salt.

  • Stir in the wet ingredients: the applesauce, milk, eggs, honey, melted butter and vanilla extract. Next, add the diced apples, dried cranberries, and pecans until well combined.

  • Spread the mixture into the prepared baking dish. Bake for 25-30 minutes or until set. Sprinkle with brown sugar and additional apple slices when serving, if desired.
