Baked Apple Oatmeal

Ingredients

  • 2 cups rolled oats
  • 1 large apple diced
  • 2/3 cup unsweetened applesauce
  • 1/2 cup milk
  • 2 large eggs
  • 1/3 cup honey
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter melted
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • Brown sugar for sprinkling optional
  • Fresh apple slices for garnish optional

Instructions

  • Preheat the oven to 350°F. Grease a square baking dish (such as an 8 or 9-inch pan).
  • In a large bowl, combine oats with cinnamon, ginger and salt.

  • Stir in the wet ingredients: the applesauce, milk, eggs, honey, melted butter and vanilla extract. Next, add the diced apples, dried cranberries, and pecans until well combined.

  • Spread the mixture into the prepared baking dish. Bake for 25-30 minutes or until set. Sprinkle with brown sugar and additional apple slices when serving, if desired.
