Ingredients
- 2 cups rolled oats
- 1 large apple diced
- 2/3 cup unsweetened applesauce
- 1/2 cup milk
- 2 large eggs
- 1/3 cup honey
- 1 teaspoon pure vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 cup unsalted butter melted
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- Brown sugar for sprinkling optional
- Fresh apple slices for garnish optional
Instructions
- Preheat the oven to 350°F. Grease a square baking dish (such as an 8 or 9-inch pan).
- In a large bowl, combine oats with cinnamon, ginger and salt.

- Stir in the wet ingredients: the applesauce, milk, eggs, honey, melted butter and vanilla extract. Next, add the diced apples, dried cranberries, and pecans until well combined.

- Spread the mixture into the prepared baking dish. Bake for 25-30 minutes or until set. Sprinkle with brown sugar and additional apple slices when serving, if desired.
