Last weekend, I finally got the chance to meet my sister’s new boyfriend. Though he got my stamp of approval, and we spent a lovely afternoon sipping tea and feasting on the last of the Christmas cookies, I started to panic as dinnertime rolled around, and I realized they might just be staying to eat with us. I wasn’t about to ask them to leave, but the reality was this was all a bit unexpected. I hadn’t even had the chance to go grocery shopping for our own dinner!

But then I suddenly remembered those chicken breasts that I was saving for a curry the next day and the half pack of bacon left over from that morning’s breakfast. Problem solved! This simple recipe was here to save the day (or evening, I should say). Consisting of tender chicken wrapped in crisp, savory bacon, this dish also happens to be perfect for busy weeknights or weekend lunches, and it tastes like you spent a lot more time on it than you really did. With a side salad, some bread, and a bottle of wine, I must say we dined like royalty that evening.

Is Bacon-Wrapped Air-Fryer Chicken Breast Healthy?

This recipe is a keto-friendly option for folks looking to cut back on carbs. Additionally, an air fryer uses significantly less oil than deep-fat fryers or frying pans, which slashes the calorie count you’d get with traditional fried foods.

While bacon does make everything better, bear in mind that this dish is high in saturated fats. For even less fat, traditional pork bacon can be substituted with turkey bacon, but the best approach is to enjoy it in moderation. That, and make sure you balance the meal out with plenty of fresh vegetables.

Adding Even More Flavor

One of the great things about this recipe is, of course, its simplicity. But if you happen to have a little more time on your hands, there are a few ways to make this dish even more special. One of my favorite tweaks is to split the chicken breasts open and stuff them with soft, creamy goat cheese before wrapping them in bacon. You could even place a sliver or two of sun-dried tomato on the cheese, or perhaps a sprig of thyme. Another unique filling idea is pineapple, basil, and mozzarella. The combination of sweet and salty is truly a treat for the taste buds! So, go ahead and use your imagination. This recipe is perfect for all kinds of delicious variations.

How To Make Ahead And Store

Leftovers can be stored in an airtight container in the fridge for up to 2 days but can be frozen for up to 3 months. The night before serving, let them thaw in the fridge. The chicken breasts can be reheated in a skillet or in the air fryer.

Serving Suggestions

Bacon-wrapped chicken is perfect with so many different sides. Personally, I love it served on Garlic-Mashed Potatoes with a side of Sautéed Broccolini or perhaps some Creamed Spinach. It’s also lovely with some Homemade Pasta and a scattering of toasted pine nuts.

Ingredients

  • 4 skinless, boneless chicken breasts about 8 ounces each
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper to taste
  • 8 slices of bacon

Instructions

  • Season the chicken breasts evenly with kosher salt and freshly ground black pepper.

  • Wrap each chicken breast with 2 slices of bacon, ensuring the bacon covers as much surface as possible.

  • Place the bacon-wrapped chicken in the air-fryer basket and cook at 380°F for 6 minutes per side. After both sides are cooked, increase the temperature to 400°F and cook for 1 additional minute to crisp the bacon.

  • Once the chicken reaches an internal temperature of 160°F, remove it from the air fryer. Let it rest, covered with foil, for 5 minutes to allow the juices to redistribute before slicing.
