I thought I knew about every type of bread that existed. But then I was introduced to avocado bread, and I realized that there are so many more kinds of delicious bread in the world.

If you have a couple of ripe avocados and a little bit of time, you can bake a loaf of avocado bread. For the most part, it’s no different to any other type of bread; it just has avocados and pecans in it. The bread should come out soft and moist, practically melting in your mouth—similar to banana bread. It will probably be the greenest loaf of bread you’ve ever baked, so don’t let the unique color scare you. Also, keep in mind that you’ll only get a subtle avocado taste in the bread, so even if you’re not the biggest avocado fan, you don’t have to worry about being overwhelmed by an avocado flavor.

Is Avocado Bread Healthy?

Avocado bread is relatively healthy if consumed in moderation. Avocados are nutrient-rich and pecans are good for digestion, but the 20 grams of sugar per serving of avocado bread might be a little high for some people. If that’s a concern, just reduce the amount of granulated sugar in the recipe.

Texture and Taste

When you’re baking avocado bread, you should be focused on creating the best texture and taste. The first thing to keep in mind is using avocados that are ripe because they will have the richest flavor. Likewise, make sure the avocados are completely smooth and free of any lumps before combining them with other ingredients because this will create the smoothest texture. Also, be gentle and avoid over-mixing when adding the dry ingredients. I like to use either a rubber spatula or a wooden spoon, which helps you to be slow and gentle while mixing the ingredients together.

How to make ahead and store

There is no need to refrigerate avocado bread, and it may become firmer if refrigerated. Just wait for it to cool and then store it in an airtight container or wrap it in plastic or foil. It should remain good for up to 4 or 5 days.

Serving Suggestions

Avocado bread is great on its own, or sliced and toasted with a little butter or jam spread on it. Of course, if you want a little more than just a piece of bread, I would recommend pairing avocado bread with a smoothie. Naturally, a Green Smoothie might be the best fit with avocado bread, but I’m also partial to a Strawberry Smoothie or even a Raspberry Smoothie to lift the sweetness of the bread. If it’s the morning and you need a little boost, try a slice of avocado bread with a Coffee Smoothie.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed avocado about 2 medium avocados
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Instructions

  • Preheat oven to 350°F. Grease and flour a 9 inch x 5 inch baking pan and set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt, then set aside.

  • In a separate bowl, whisk the mashed avocado, sugar, oil, milk, eggs, and vanilla extract until smooth.
  • Add the flour mixture to the avocado mixture and stir until just combined. Fold in the chopped pecans.

  • Transfer the batter to the prepared pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

  • Allow the bread to cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
