Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed avocado about 2 medium avocados
- 3/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350°F. Grease and flour a 9 inch x 5 inch baking pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt, then set aside.

- In a separate bowl, whisk the mashed avocado, sugar, oil, milk, eggs, and vanilla extract until smooth.
- Add the flour mixture to the avocado mixture and stir until just combined. Fold in the chopped pecans.

- Transfer the batter to the prepared pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

- Allow the bread to cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
