Whether it’s at lunch, late night, or really any time in between, sometimes my cravings call for a salty, crunchy bag of potato chips. While I try to eat them in moderation alongside a healthy sandwich or salad for lunch, what I’ve really been searching for is a healthy alternative. That’s why I started looking for recipes for air-fryer chips. And what better way than to use vegetables? While there are healthy ways to make your own potato chips, I love the idea of getting a serving of vegetables in with this recipe for air-fryer zucchini chips.

First, this recipe avoids deep-frying in oil, which is definitely a healthy advantage. Using the air fryer speeds up the cooking time and also reduces the amount of oil you need. Second, the flavors are great! If you’re thinking that there are already tons of flavored potato chips out there, you will be pleasantly surprised. You can customize air-fryer zucchini chips with a lot of spices to create your own perfect chip. Ready in less than an hour, this recipe makes a heaping helping of chips for a healthy snack you’ll want to enjoy again and again.

Are Air-Fryer Zucchini Chips Healthy?

There are four simple ingredients in this recipe. The main ingredient, zucchini, is a source of vitamins A and C, as well as fiber, magnesium, and potassium. You’ll also get a serving of veggies in your diet, while satisfying your snack cravings. With only a quarter teaspoon of sea salt, these chips are much lower in sodium than store-bought potato chips. Plus, there’s no sneaky, added sugar! Thanks to the air fryer, you’ll be preparing these with a small amount of olive oil, which is rich in monounsaturated fatty acids, vitamin E, and polyphenols. Now that’s a powerhouse!

Tasty Ways to Customize Your Chips

My favorite thing about this recipe is that the seasoning possibilities are nearly endless! I love to recreate traditional potato chip flavors and see how they stack up. Craving a barbecue potato chip? You’ll need paprika, onion powder, brown sugar, garlic powder, and chili powder. How about sour cream and onion chips? Mix together dried parsley, garlic powder, salt, and grated Parmesan cheese. Keep in mind that these modifications may change the health benefits of the recipe, so it’s important to keep an eye on your ingredients.   • 1 large zucchini
  • 1 tablespoon olive oil

Instructions

  • Preheat the air fryer to 375°F. Slice the zucchini into thin rounds using a mandolin for uniform thickness.
