A few Christmases ago, my parents surprised me with an air fryer, and let me tell you—it’s been a culinary game changer. This thing is hands-down the best kitchen appliance since the microwave. I use it more than my oven, whipping up everything from whole chickens to mini pizzas. I can’t believe there was a time when I cooked without one. If anything, I need a bigger air fryer to keep up with my family of five!

If I had to pick a favorite perk of this modern marvel, it’s that this beauty lets me “fry” without the guilt. With an air fryer, I don’t need vats of oil to make deep-fried favorites. That means less mess, less stress, and fewer calories, too! But don’t worry—you’re still going to love how it tastes. These air fryer potato wedges are a prime example!

Who doesn’t love a crispy on the outside, fluffy on the inside potato wedge? It’s the kind of side dish that goes with just about everything or works as a snack on its own. And the real magic here is how the air fryer gives you a deep-fried crispiness without drowning everything in oil. Best of all, it’s done in just 30 minutes.

Taste-wise, there aren’t any surprises. They’re tossed in a simple blend of spices like paprika and garlic powder, reminiscent of your local steakhouse or TGIF. But feel free to add whatever seasoning you’d prefer. Either way, you’re left with one jazzed-up spud. And if your kids are anything like mine, they’re going to devour these faster than you can make them!

Are Air-Fryer Wedges Healthy?

These wedges are made with only a hint of olive oil, so needless to say, they’re much lighter than traditional fried potatoes. Plus, russet potatoes are a good source of potassium and fiber.

For a sweeter and perhaps healthier twist, swap the russets for sweet potatoes if you’d like a vitamin A boost. Also, if you’re watching your sodium, cut back on the salt in the seasoning blend.

Russet Potatoes: A Win For Wedges

I’m a potato fiend. Purple, red, Yukon Gold—I love them all. But when it comes to potato wedges, russets are by far the best pick. Russets’ thick skin crisps up beautifully in the air fryer, and their high starch content keeps the insides extra fluffy—it’s like eating a cloud. Now, I bet you’re wondering what other varieties would taste like, right? Yeah, I had the same question. I found that waxier varieties like Yukon Gold or red potatoes simply don’t provide the fluffy texture you want for wedges—stick to russets!

How to Make Ahead and Store

For best results, cook the potato wedges fresh. Leftovers (if you have any) can be stored in an airtight container in your fridge for up to 3 days. Reheat them in the air fryer to restore their crispiness. They may need a brush of olive oil!

Serving Suggestions 

Potato wedges are the ultimate sidekick and super kid-friendly. My own little spawns enjoy these paired with Air-Fryer Chicken Tenders and Bacon Mac And Cheese. For the adults, serve the wedges with steak or turkey burgers for a healthier burger night. And if you’re getting tired of ketchup, this Blue Cheese Dip adds a sharp, tangy twist!

Air Fryer Potato Wedges

Ingredients

  • 1 large russet potato (about 330 grams)
  • 1 1/2 teaspoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 plus 1/8 teaspoon sea salt
  • 1/4 teaspoon ground mustard

Instructions

  • Wash and dry the potato. Slice it in half and then into wedges. Dry the wedges off with a paper towel.
  • Place the wedges in a bowl and toss with the oil.
  • Mix the rest of the ingredients in a bowl and add to the potatoes, tossing to coat well.
  • Place the potatoes in a single layer in the air fryer and cook at 400°F until crispy and golden brown, about 20 mins.
