Last April, I was planning a girls’ brunch and had everything figured out except the cocktails. I was considering mimosas, but I wanted something more homemade. Something special and unique. Something that would impress my guests and make them think, “How did she do that?” So I sat at my kitchen counter and thought about the flavors of spring and how to incorporate yummy white wine. I started tinkering around until I came up with the recipe you’re about to read.

I love this recipe because it doesn’t just use your average simple syrup. Regular simple syrup is sugar dissolved into hot water, but instead, I chose a honey simple syrup. But I didn’t just dissolve it in water. I used peach tea! And I added a third factor to this flavor party: fig preserves!

Figs and honey are a classic combo, but add the peaches, and you have a floral, fruity combination that will make you want to lie down in a meadow full of spring blooms. I will say, I like my wine very sweet, so if you like it less sweet, start with a drier wine. This cocktail just begs to be served with brunch classics like a frittata with fresh, seasonal veggies or fresh fruit pancakes!

Is This White Wine Cocktail With Peaches And Honey Fig Syrup Healthy?

Peaches are a great source of fiber, potassium, and vitamin C. However, we both know that a cocktail (especially one with alcohol!) really doesn’t fall into the “healthy” category. Remember to consume with moderation!

How To Make It A Mocktail

If you want to indulge in the flavors of this cocktail without the wine, there are plenty of options! Mocktails are having a moment right now. It feels like they are a strong presence on all the menus at the brunch joints I love. People are definitely more aware of non-alcoholic spirits and wines than ever. There are plenty of brands of non-alcoholic white wine to choose from for your mocktail. If you want to go the juicy route instead, try some non-alcoholic apple cider, white grape juice, or peach juice!

How Do I Store Leftovers?

Store leftovers in the fridge in an airtight container for up to 3 days.

Serving Suggestions

To build a brunch around this cocktail, I suggest serving some classics like Asparagus Frittata, Strawberry Pancakes, or a Fried Egg Burger. If you want to mix it up, you could try these heavenly and fluffy Japanese Pancakes. If you’re embracing the flavors of spring, I recommend serving a salad on the side, like a Spring Salad or Berry Salad. Ingredients

  • 1/4 cup water
  • 1 peach tea bag
  • 1/4 cup honey
  • 2 tablespoons Bonne Maman fig preserves
  • 4 cups white wine of choice
  • 2 peaches sliced

Instructions

  • In a medium pot, bring the water to a boil. Once boiling, remove from heat and place the tea bag in. Let the tea steep for about 5 minutes, and then remove the tea bag.
  • Stir the honey and fig jam into the pot and bring to a boil over high heat.
  • Once boiling, stir constantly for 1 minute and then reduce the heat to medium, stirring frequently, until it begins to thicken, about 3 minutes.
  • Strain the mixture into a small bowl, pushing the jam through the strainer with a spoon. Not all the jam will go through, but push as much as you can. Discard the rest.
  • Pour the wine into a large measuring cup or microwave-safe pitcher and microwave until warm, about 2-3 minutes. This is to help dissolve the honey syrup.
  • Pour all the honey syrup into the warm wine, stirring until it is totally dissolved.
  • Place the sliced peaches into the wine and refrigerate until cold, approximately 2 hours.
