Perfectly portioned, this Easy Waffle Recipe For One will make every morning a good morning!

Everyone loves a fluffy stack of waffles for breakfast. With myriad flavor options, from fruity berries to chocolate chips, waffles are the perfect way to start the day. However, almost every recipe you can find out there has you making a big batch. Sure, a basket full of waffles might be ideal if you’re feeding a hungry family, but sometimes you just need one or two of these beloved treats for a solo morning indulgence.

Instead of struggling with downsizing a larger recipe, I came up with this easy recipe that makes just two delightful waffles. They have that perfect, slightly crispy texture yet tender bite, and are a great canvas for all kinds of tweaks and variations. I love them flavored with a little vanilla extract or a touch of warm spices such as cinnamon or nutmeg. They’re lovely topped with fresh fruit or a homemade compote, but just as delicious with a handful of chopped pecans in the batter and a drizzle of maple syrup (my personal favorite). Now you can also enjoy a blissful breakfast-for-one without worrying about an overwhelming amount of leftovers or having to do mental gymnastics to reduce your yield. If you ask me, that’s what I call a recipe for a happy (and relaxed!) morning.

More than just breakfast

What I love about this recipe is that it also serves as the base for the ultimate dessert for two. On weekend date nights, when I make a special three-course dinner, these waffles often round out our meal in the most deliciously effortless way.

I love to top the freshly baked and still warm waffles with a generous fluff of whipped cream and strawberries that I’ve marinated in a mixture of red wine, sugar, balsamic syrup, and aromatic rosemary. Another excellent idea is to serve them with apples sautéed in butter and seasoned with pumpkin spice. Add a scattering of toasted walnuts and a scoop of cinnamon ice cream, and you have a gorgeous autumnal treat. To serve them poire belle Hélène-style, I’ll sauté slices of pear and serve the waffles with vanilla ice cream and a decadent drizzle of melted dark chocolate (not the stuff from a squeezy bottle). Keep these ideas in mind the next time you’re looking to impress that special someone!

How do I store leftovers?

Though you’re not all that likely to have leftovers with this recipe, in the event that you do, they’ll keep well in the fridge (in an airtight container or Ziploc bag) for up to 3 days. You can also wrap them in plastic and freeze them for up to 3 months. No need to defrost. Simply pop them in your toaster straight from frozen.

Serving suggestions

In the warmer months, I love to have my waffles with a nutritious smoothie. This vibrant Blueberry-Spinach Smoothie is an easy way to get in some antioxidants along with my morning indulgence. If it’s one of those mornings, and I’m in need of a pick-me-up, I’ll pair it with a frothy Coffee Smoothie. Come the colder months, nothing beats pairing my waffles with a cozy drink such as this classic Pumpkin Spice Latte Recipe or a fragrant Chai Latte. And if I’m in the mood for a hearty breakfast, I’ll serve these waffles with a side of Vegan Scrambled Eggs and some crispy Tempeh Bacon.

Ingredients

  • 6 tablespoons all-purpose flour
  • 3/4 teaspoon baking powder
  • Pinch of kosher salt
  • 1 tablespoon granulated sugar
  • 5 tablespoons milk or buttermilk
  • 1/3 of a beaten egg
  • 1 tablespoon melted butter

Instructions

  • Preheat your waffle iron to the desired temperature setting.
