- Dairy Free Vanilla Protein Powder
- Vegan Xantham Gum
- Mashed Ripe Banana
- Coconut Sugar
- Unsweetened Vanilla Almond Milk
- Coconut Oil
- Baking Powder
How to make Vegan Gluten Free Banana Bread
So we’ve established how DELISH this loaf is going to be, but there’s an added bonus- it’s SO simple to make too! Now that we’ve rounded up the ingredients we will need, here’s how to make gluten free dairy free banana bread:
First, preheat your oven to 350 degrees and line the bottom of an 8 inch loaf pan with parchment paper. Rub the sides of the pan with oil.
In a bowl, mix together the flour, protein powder, xantham gum, cinnamon, and salt until well combined. In a larger bowl, stir together the banana, sugar, milk, and vanilla.
In a small bowl, whisk together the oil, water and baking powder until the mixture is frothy. Add to your banana mixture and whisk together until smooth.
Add your dry ingredients mixture to your banana mixture and stir until well combined. Pour your batter into the prepared loaf pan, using a spatula to scrape the sides of the bowl.
Bake your banana bread in the oven for about 1 hour and 10-20 minutes, or until an inserted toothpick comes out clean. Let it cool completely in the pan!
Once cool, remove your loaf from the pan and slice it into slices using a serrated knife. Be gentle as it is fragile! Enjoy- I guarantee you’ll think it is the BEST vegan banana bread!

Unfortunately, protein powder is a MUST for this recipe. Since it is vegan and doesn’t use eggs, the powder is vital to give structure to the banana bread.
Can I leave out the Xantham Gum?
This is also a big NO, since the recipe doesn’t call for eggs. The combination of protein powder and xantham gum will provide that must needed structure to hold together the loaf.

- 3 Cups Oat flour (GF if needed) 324g
- 1/4 Cup Dairy free vanilla protein powder (30g)
- 1 1/2 tsp Vegan xantham gum
- 4 tsp Cinnamon
- 3/4 tsp Salt
- 2 1/4 Cups Mashed ripe banana (540g or about 4 or 5 large bananas)
- 1 Cup Coconut sugar
- 1/2 Cup Unsweetened vanilla almond milk
- 2 tsp Vanilla
- 3 Tbsp Coconut oil, melted
- 6 Tbsp Water
- 6 tsp Baking powder
- Pre heat your oven to 350 degrees and line the bottom of an 8 inch loaf pan with parchment paper, rubbing the sides with oil.
- In a medium bowl, whisk the flour, protein, gum, cinnamon and salt. In a separate large bowl, whisk the banana, sugar, milk and vanilla until well mixed.
- In a small bowl, whisk the oil, water and baking powder until frothy. Add into the banana mixture and whisk until well combined.
- Add the dry ingredients into the banana mixture and whisk until mixed. Pour into the prepared pan
- Bake until a toothpick inserted in the center comes out clean, about 1 hour 10 - 20 mins. Let cool COMPLETELY in the pan.
