Today I’m eating my thoughts.
You know like when you have to eat your words but what you said was actually totally, 110% NOT THE TRUTH? <– That. But with my thoughts.
B-cauz I’m taking back ALL the not-so-pretty-and-uplifting thoughts that I’ve had about chickpeas.
Mhhmmmm, I know. Chickpeas have been poppin’ into lots of recipes around this neck of the internet for quite some time: think homemade hummus, creamy chickpea curry, and even Grilled Avocados Stuffed with Chickpeas. And, I’ve enjoyed eating them ALL. BUT, for some reason I had this notion that I SHOULDN’T BE ENJOYING THEM
Weird right?
My thinking brain came to the conclusion that I can’t remember ONE TIME that I ate a chickpea, in ANY form, as a kid. FOR SERIOUS GUYS. Not one time. I don’t need to use any fingers to count the moments that chewy, soft chickety-peas entered the space where my tongue and taste buds join forces to welcome delicious nums into my life.
Preee sure that, because of this life-long deprivation that I have been forced to endure, some cobweb-y, dark and scary place in the verrrrry back on my noggin’ decided that I SHOULD NOT like chickpeas, and they are bad.
It’s been the never ending struggle inside my head. MY heart is all “I LIKE THIS RECIPE WITH CHICKPEAS. IT IS SO YUMMY.” Then my scary-brain-place says “LIES.”
You understand right?…Don’t answer that.
ANYWAY. Today. I declare it the day to straight UP shut the door on that part of my wrong-thinking brain because chickpea GOALS GUYS. I have them.
They’re so soft and chewy and blend into the creamiest, smoothest mixture of peanut flour and spicy cinnamon with bursts of sweet, rich chocolate that is my basically EVERYTHING in my life right now.
Side note: If you reallllly just can’t get past chickpeas, you could totally try this similar recipe: peanut butter protein healthy cookie dough balls.
Errr, I mean, sort of everything in my life right now. The peas of the chick variety are currently in the midst of a battle for the NUMERO UNO spot with Better Body Food’s PB Fit Peanut Butter Powder. UMMM, guys, have you tried this stuff? If you have, you know that when I say that I want to mix it with water and slather it on anything that I can get my peanut-butter-munching-mouth around, I am NOT exaggerating. Not one bit.
Think peanut butter. But without the fat or calories but – wait for it – ALL THE happy-muscle-fueling protein. Totally having a crazy in love food moment right now. And Beyoncé is now stuck in your brain forever. Sorry ‘bout that one.

Ignore the photos. Good food that I SERIOUSLY eat every.single.day (not a lie) is on your horizon.
Speaking of good food on the horizon. How about ridiculously easy, VEGAN bites that justsohappen to taste like super-rich and lusciously smooth cookie dough, and are jam PACKED with teensy tinsy chocolate chips and hit your face with DOUBLE the peanut butter goodness once you nibble your teeth right down into the center of peanut butter EXPLOSION land.
Peanut butter powder in the dough. Peanut butter straight up filling the center. Maximum peanut butter status: MET.
Just think of those moments as a kid when you just wanted to eat the entire bowl of dough when Mom made healthy chocolate chip cookies, but then she said NO.
Now you can. Because no eggs. And because you are an adult and you run YO LIFE.

Cookie dough eating. The perks of adulting.

Ingredients
- 1 oz Can Chickpeas Drained and rinsed 15.5
- 1/2 Cup + 1 Tbsp Peanut butter divided
- 1/3 Cup Better Body Foods PB Fit Peanut Butter Powder
- 3-4 Tbsp Better Body Foods Agave to taste
- 1 1/4 tsp Raw Vanilla extract
- 1 tsp Cinnamon
- Pinch of salt
- 2 1/2 Tbsp Mini Dairy-free chocolate chips
Instructions
- Place the drained and rinsed chickpeas, 2 Tbsp of the peanut butter (saving the rest for later), the PB Fit, agave, vanilla, cinnamon and a pinch of salt into a SMALL food processor, mine is 3 cups.
- Blend, scraping down the sides as necessary, until the mixture is thick, creamy and smooth. This could take a good 5-7 minutes, and you'll need to scrape down the sides to get all the chickpeas in quite a few times. Just be patient, it WILL happen!
- Transfer the dough into a medium bowl and stir in the chocolate chips.
- Make a heaping 1/2 Tbsp sized ball of the dough and break it into two small balls, lightly flattening them. Place 1/4 tsp of peanut butter onto the center of one of the rounds, place the other round over top and sealing the sides. Roll into a ball. *
- Repeat with remaining dough and DEVOUR.
Tips & Notes:
Store bites in an air-tight container in the refrigerator...if you don't eat them all the first day! 😉
