Enjoy a quick, healthy, and delicious breakfast any day of the week with this Vegan Avocado Toast recipe.

Creamy avocado toast on whole grain bread with red pepper flakes on a white plate. Perfect healthy breakfast or snack, vegan and high in healthy fats.

I signed on to the whole avocado toast scene extremely late, as I’ve never been one to jump into the “craze” of the moment, figuring it would pass soon enough. Was I ever wrong! Okay, I admit this dish is here to stay. And with vegan avocado toast, you don’t need to feel left out of the fun and deliciousness.

I’m not ashamed to say that you can find me enjoying avocado toast in some form at least a few times a week. It is one of the easiest breakfasts to make at home, even on a busy morning. If I’m really strapped for time, I skip the whole mashing thing and just slice the avocado right onto the toast.

What I love best about avocado toast is its versatility. You can have it every day of the week and still enjoy a different experience each time. As you keep reading, you will see the many ways I jazz it up to create delicious, colorful taste sensations. Let your creativity and imagination take you to culinary places you’ve never been before, and let me know in the comments how you top your toast.

Is Vegan Avocado Toast Healthy?

Vegan avocado toast is a healthy way to start the day. It is low in calories, carbohydrates, sugar, cholesterol, and saturated fat and provides a good source of heart-healthy monounsaturated fat and fiber. Using vegan, gluten-free bread makes this recipe suitable for individuals with gluten intolerance. If desired, adding some hummus or chickpeas can help increase the protein in this dish.

How To Create An Avocado Toast Charcuterie Board

Charcuterie boards are all the rage these days, and yes, I’ve jumped on this trend, too. They’re great for parties, and creating an avocado toast charcuterie board is ideal for a weekend brunch, a bridal shower, a baby shower, or a book club get-together.

How do you get started? I recommend stocking up on a variety of vegan breads, bagels, and crackers so people have options for their bases. Fill small bowls with the mashed avocado from this recipe, vegan scrambled eggs (link in the serving suggestions section below), chopped chives, capers, and pumpkin seeds. Place the bowls around the board, surrounded by the various slices of toasted bread, crackers, grapes, and berries. Add slices of tomatoes, red onions, radishes, and avocados. You can also add vegan bacon, vegan deli slices, and microgreens.

FAQs & Tips

How Do I Store Leftovers?

The best way to store leftover avocado mash is to do so separately from the bread, as the toast will become soggy. You can store the mashed avocado for up to 24 hours, as the lemon juice will help prevent browning. Place it in an airtight container and cover the surface of the avocado with a layer of plastic wrap to prevent air from reaching it. Stir the avocado before topping the toast to ensure everything is well-mixed.

What Are Some Other Toppings To Add To Vegan Avocado Toast?

There are numerous ways to elevate your avocado toast. Raw or pickled red onion, chickpeas, hummus, sprouts, cucumbers, tomatoes, and harissa or salsa are other great options. We have plenty of delicious salsa recipes you can try, so get creative and enjoy. I buy bags of crunchy roasted lentils, pumpkin, and sunflower seeds at the grocery store. There are numerous flavors, and they make an ideal topping for avocado toast, adding superb crunch to every bite.

Can I Substitute Lime Juice For The Lemon Juice?

Absolutely! Lime and lemon are interchangeable in many recipes. When I make guacamole, which is essentially a dip made from mashed avocados, I use whichever citrus fruit I have on hand. You get a subtle change in flavor that is good either way.

Serving Suggestions

I like to go all out when I make vegan avocado toast, taking it to the next level by topping it with Sautéed Spinach. If you’re planning a weekend brunch, kick it up a notch by topping it with Vegan Crab Cakes or some Vegan Scrambled Eggs to mimic the over-medium egg I like to add to mine. Add a colorful Fruit Salad on the side (swapping the honey for maple syrup, if needed), and you have the perfect way to start the day.
