Ground turkey meat forms into a delicious sausage patty that’s good for breakfast, lunch, or dinner!

For those who think eating sausage requires pork, think again! Not only is it possible to make a juicy and delicious sausage using ground turkey, it’s easy. Turkey meat is considered to be healthier than pork due to the lower fat content. The other great thing about turkey sausage is that it’s easy to incorporate into any meal. You can make turkey sausage patties for breakfast or treat them like hamburgers by putting them on a bun and making them the main course for dinner. The choice is yours.

The other thing I love about this recipe is that it still delivers the spiciness and bold flavor of traditional pork sausage, despite being made of ground turkey. The trick is to combine the ground turkey meat with the right mix of herbs and spices. With fennel seeds, dried sage, red pepper flakes, and a few other ingredients, you can recreate the spiciness that you typically get from pork sausage using ground turkey meat instead.

Is Turkey Sausage Healthy?

Yes, turkey sausage is a healthier alternative to traditional sausage. Ground turkey is readily available in a range of options, usually anywhere from 85% lean all the way up to 99% lean. This recipe calls for a 93% lean to 7% fat blend, which can help make a juicy sausage patty. In addition to providing a source of protein, turkey meat is high in B vitamins and minerals like iron, too.

Be Gentle

When preparing turkey sausage patties, remember to be gentle with the meat. When you’re mixing the seasonings with the turkey, you don’t want to overmix because the meat will be tough to chew once it’s cooked. Instead, mix until everything is just combined. The same idea applies to cooking the sausage. You want to be conservative with the time and temperature, so don’t use a high heat or prolonged cooking time. This way, you’ll be able to enjoy a juicy, flavorful turkey sausage patty.

How to make ahead and store

Whether you have uncooked or cooked turkey sausage patties, they should be refrigerated and stored in an airtight container. Uncooked turkey sausage patties will last up to 2 days in the fridge before cooking, while leftover cooked patties can be re-heated and consumed up to 3 days later.

Serving Suggestions

Ingredients

  • 1 teaspoon dried sage
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon dried thyme
  • 2 pinches red pepper flakes
  • 1 pinch ground nutmeg
  • 1 pinch ground cloves
  • 1 clove garlic minced
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 1 pound ground turkey 93% lean
  • 1 tablespoon olive oil

Instructions

  • In a small bowl, combine sage, fennel seeds, thyme, red pepper flakes, nutmeg, cloves, garlic, salt and pepper.

  • Place the ground turkey in a large bowl and sprinkle the mixed spices over it. Mix gently with your hands until well combined.

  • Divide the turkey mixture into 8 equal portions and form each into a patty.

  • Heat a non-stick skillet over medium heat with the olive oil.
  • Cook the patties for about 3-5 minutes on each side, or until cooked through and slightly browned.
