A dish as savory as Sun-Dried Tomato Chicken does not need a special occasion, but it is certainly good enough to save for a momentous meal.
It’s so easy to make savory chicken dishes in only 30 minutes, even recipes like this one, which is packed with lots of delicious flavor. I love pairing sun-dried tomatoes with chicken—they’re such a versatile ingredient that add a sweet tanginess to otherwise simple dishes. And since bringing back a few packages of these delicious red beauties from Italy, it was only natural that I’d find myself making this dish time and again.
This recipe calls for jarred sun-dried tomatoes packed in oil, but you can also use dehydrated sun-dried tomatoes, too. In fact, I often used the dried ones myself. All you have to do to rehydrate them is soak them in water for a few minutes. That said, when I do use jarred sun-dried tomatoes, I also use the oil they are packed in (instead of olive oil) to sauté the chicken. It imparts even more intense flavor to the dish. Don’t you just love it when something can pull double-duty in the kitchen?
By the way, did you know that this recipe is often referred to as “Marry Me Chicken?” It has a few variations, many of which also contain freshly grated Parmesan cheese (yes, you can add it to this recipe). As the rumor goes, it’s a dish that has such impressive flavor that cooking it for your significant other can inspire a marriage proposal. Make it a one-pan meal
Although this recipe already contains sun-dried tomatoes and spinach, you can still enhance the nutritional profile and make it more filling by adding additional vegetables. Sliced onions or leeks, bell peppers, and mushrooms are some of my favorite additions. I’ve also added jarred artichoke hearts, halved cherry tomatoes, cooked Brussels sprouts, and steamed broccoli in the past with very good results. Sliced or whole Kalamata olives are another way to enhance the flavor of this recipe.
How do I store leftovers?
Allow any leftover sun-dried tomato chicken to cool to room temperature before refrigerating in an airtight container for 3-4 days. You can also freeze the cooled chicken in freezer-safe containers or zippered bags for up to 3 months. Defrost the frozen chicken overnight in the refrigerator before reheating on the stove or in the microwave. You may need to add a little more cream when reheating.
Serving suggestions
Sun-dried tomato chicken is excellent served over plain noodles, Instant-Pot Mashed Cauliflower, Slow-Cooker Rice, or Instant-Pot Quinoa. Start your meal with a nice, vegetable-packed Spring Salad, or add some Microwave Broccoli or Roasted Brussels Sprouts And Asparagus on the side. Enjoy a light and refreshing Panna Cotta for dessert, and you have the makings of an unforgettable meal.

Ingredients
- 1 1/2 pounds boneless skinless chicken breasts pounded to even thickness
- Salt to taste
- Freshly ground black pepper to taste
- 1 tablespoon olive oil plus more if needed
- 3 garlic cloves minced
- 1/3 cup dry white wine
- 3/4 cup low sodium chicken broth
- 2/3 cup heavy cream
- 1/2 cup sun-dried tomatoes drained and roughly chopped
- 1 1/2 cups baby spinach
Instructions
- Place the pounded chicken breasts on a plate. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 4-6 minutes per side until golden. If the chicken sticks to the skillet while cooking, add more oil as needed. Remove the chicken and set aside.

- Lower the heat to medium and add the minced garlic to the same skillet. Cook for about 15 seconds until fragrant. Pour in the white wine and scrape the browned bits from the bottom of the pan. Let it simmer for 1 minute to reduce slightly.
- Add the chicken broth, heavy cream, and sun-dried tomatoes. Stir and let the sauce simmer for 3 to 5 minutes until it begins to thicken.

- Return the chicken to the skillet and add the baby spinach. Continue to cook for an additional 3 minutes until the chicken is cooked through and the spinach wilts. Taste and adjust the seasoning if needed; then serve immediately.
