Sugar Snap Peas Recipe

True to their name, sugar snap peas are naturally sweet, crunchy, and vibrant. Did I mention versatile? You can eat these plain as a snack with dips, make them as a healthy side to a protein (like steak), or add them to a stir-fry or poke bowl. You could even serve these sugar snap peas with eggs for breakfast, adding a burst of fresh greens and garlicky flavor to your morning meal. Personally, I enjoy tossing them into a salad for a satisfying balance of cooked and raw veggies that will keep me energized. The possibilities are endless!

The best part of this recipe is how quick and easy it is to make. It’s perfect for speedy weeknight dinners or quick lunches. Because the peas are sautéed, they retain their irresistible taste and texture. Think of them as nature’s greenest candy!

Are sugar snap peas healthy?

Despite their name, sugar snap peas are very healthy because they’re rich in vitamins and minerals. They’re a great treat as a post-workout snack or an afternoon pick-me-up. The recipe only calls for one tablespoon of oil, so the amount of fat is minimal.

What can’t you do with these peas?

Whether you’re a meat-eater or a vegetarian, these peas pair well with almost everything! But I have to wonder, is there anything they don’t go well with? In fact, the answer is no! You can spice them up with one to two teaspoons of cumin or paprika, and you can add tanginess by sautéeing them in a tablespoon of apple cider vinegar. Playing with the seasonings and cooking methods is easy and fun. Feel free to get as creative as you’d like. I know this sounds crazy, but I’ve also added them to a sandwich! Wild, I know, but the verdant pop of sweetness is such a fun alternative to the fresh crunch of lettuce!

How to make ahead and store?

Leftovers can be easily stored in an airtight container or Ziploc bag for up to 4 days. Easily reheat on the stove or pop in the microwave. I don’t recommend freezing them, as this might ruin their texture. These bright and beautiful peas are best enjoyed fresh or within a few days after cooking.

Serving Suggestions

While there are many kinds of stir-fries you can add these precious peas to, my favorites are Cabbage Stir Fry and Cashew Chicken Stir Fry.

Ingredients

  • 1 pound sugar snap peas trimmed and strings removed
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons lemon zest

Instructions

  • Heat olive oil in a large skillet over medium heat.
