A creamy, luscious brunch that leaves French toast lovers saying “one more time, with filling!”

If you thought French toast was decadent enough by itself, think again… your taste buds are in for a tantalizing treat. This might very well be the fluffiest, cream-stuffiest brunch you’ll ever make. Stuffed French toast takes classic brioche bread and slathers it with sweet cream cheese and fresh strawberries.

Whether you make it for yourself or for a family feast, this dish can satisfy large and little mouths alike. Even some picky eaters might find this one enticing, because it’s got the perfect balance of sweet and fluffy, like a scrumptious cake.

While it looks super fancy, it’s actually quite simple to make. You’re basically buttering the bread with cream cheese before sandwiching it firmly and dipping in egg. Fry on both sides until golden brown and you’ve got yourself a beautiful brunch that satisfies and keeps you full for hours.

Is Stuffed French Toast Healthy?

Since this is basically a breakfast cheesecake, I wouldn’t say it’s healthy or particularly nutrient-dense. That being said, the cream cheese does offer a small boost of protein compared to regular French toast, which doesn’t have as much. In the right portions, this is an acceptable indulgent treat for special occasions, like a birthday brunch or holiday breakfast. It’s also suitable for vegetarian diets and can be made gluten-free with the use of gluten-free brioche.

Go Wild With Toppings

While the topping options for stuffed French toast are nearly endless, I’d like to hone in on a few favorites to get your creative juices flowing. Fresh strawberries are great on their own, but you can also mix it up with blueberries, raspberries, and blackberries for a beautiful array of color, flavor, and texture. Aside from fruit, you could also top this French toast with unsweetened toasted coconut flakes, a drizzle of honey or maple syrup, and a sprinkle of cacao nibs or chocolate chips. I also like to spread my slices with rich homemade Walnut Butter.

How to make ahead and store

While stuffed French toast is best enjoyed fresh, you can store it covered in the fridge for up to 3 days. To reheat, simply bake in the oven at 350 degrees for 10 to 15 minutes. I don’t recommend freezing it, as thawing it could cause mushiness or lack of flavor. So, finish it off as soon as possible!

Serving Suggestions

What else goes well with this magnificent morsel? Well, I always enjoy some savory sides for my sweets in the morning. If you’re like me in this way, then you could whip up some Hash Browns, Oven Bacon, or Air-Fryer Fried Eggs.

For some more sweetness, try an Avocado Smoothie Bowl, or wake up a little more with a Coffee Smoothie.

Stuffed French Toast

Ingredients

  • 10 slices of brioche bread
  • 6 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 large eggs
  • 2/3 cup milk
  • 3/4 teaspoon ground cinnamon
  • Unsalted butter as needed
  • Powdered sugar for dusting
  • Fresh sliced strawberries for garnish

Instructions

  • In a bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Add more powdered sugar to taste if desired.

  • Spread the cream cheese mixture evenly over 5 slices of brioche bread. Top each with another slice to form sandwiches.

  • In a shallow dish, whisk together the eggs, milk, and cinnamon.

  • Melt butter in a skillet over medium heat. Dip each sandwich in the egg mixture, coating both sides. Cook each side until golden brown, about 2 to 3 minutes per side.
