Two Christmases ago, I gifted a loved one a personalized basket that included a log of homemade rosemary-honey compound butter, wrapped in parchment paper and tied with a bright red ribbon. To this day, it’s still something they will bring up and thank me for. And butter seems to be having a real moment. I don’t know if you’ve noticed, but butter-centric content has been flooding the internet lately. It appears on my social media feeds daily. Pristinely edited videos of keto influencers slicing into their rare sirloin on a cherrywood Boos Block in the sun, with a bowl of grass-fed butter for dipping, are everywhere.

It doesn’t feel like it was that long ago when butter was considered pretty unhealthy, but things have certainly shifted. Today, the general consensus is that if enjoyed in moderation as part of a balanced diet, butter doesn’t seem to be the enemy anymore. I’ll admit, I’m pretty pleased about that. While there’s no denying that processed “buttery spreads” are best avoided, real butter is made from just two simple ingredients: heavy cream and salt. When you make something like this delicious steak butter at home, you have full control over the quality of the ingredients, and that’s a beautiful thing. This easy recipe, made with just a few simple ingredients (butter, garlic, fresh herbs, spices, and lemon) will elevate the flavor of your steak in a big way.

Because butter is high in fat, it’s best if consumed in moderation. The main ingredient in butter is heavy cream, making it an ultra-rich indulgence that really shines when paired with your favorite cut of steak. While this steak butter is already full of bright and complex flavor, it’s possible to adjust it to suit your specific tastes. To amp up the garlic flavor, add an extra clove. If you’d like to add some heat, you can add a pinch of red chili flakes or cayenne pepper to the compound. Not a huge fan of the particular herbs used here? You can use whichever herbs you love most–basil, tarragon, chives, you name it. Ingredients

  • 1/2 cup unsalted butter softened
  • 3 cloves garlic minced
  • 3 1/2 tablespoons fresh parsley finely chopped
  • 1 teaspoon fresh thyme finely chopped
  • 2 teaspoons lemon zest
  • Salt and pepper to taste

Instructions

  • In a bowl, mash the softened unsalted butter with a fork until smooth.
