A classic recipe for spritz cookies, just like grandma makes! These are whole wheat, egg free, easy and pretty!

Cookies for Kids’ Cancer is a non-profit organization that raises funds for research to develop new, improved treatments for pediatric cancer, which claims the lives of children in the US more than any other disease. It was also founded by to OXO employees! SO cool!
OXO is being amazing and donating up to $100,000 to support Cookies for Kids’ Cancer! For every stickered item sold, OXO will donate 25 cents in support of pediatric cancer research. Make sure you look for specially marked OXOproducts at participating retailers in September!
Now let’s actually talk about the spritz cookies.
You may be a leetle confused about the fact that we are eating spritz cookies in September. I mean, I normally think about these pretty little yummies around Christmas time.
BUT WHY SHOULD SUCH DELICIOUSNESS ONLY HAPPEN IN DECEMBER? Spritz cookies ALL YEAR I say. And I’m also voting for eating a healthy ginger snap recipe all year round. BUT, that is besides the point.
That’s my new motto for life. That I made up right now. You understand.
I pondered trying to make up my own spriz cookie recipe. BUT, when I think spritz cookies, I think Grandma. So, I decided against it and this here recipe is from Chez G-ma.
Sidenote: Yes, there are no eggs. I was confused when she sent me the recipe too.
Sidenote, the sequel: Yes, there is a lot of icing sugar. Yes, you should blend it in on LOW speed. No, you should not do it on high speed and risk looking like a snow beast. Not that I know anything about that.
I did alter the recipe slightly. And by that I mean I just used whole wheat pastry flour AND cut the recipe down by about 1 million.
Two people can’t eat 500 spritz cookies by themselves ya’ll. Or, at least they SHOULDN’T.
They’re light, buttery and ALL the fun to make. I mean you put a ugly blob of dough in a little container thing, press a button and MAGIC! Out comes a flower, a star, OR EVEN a teddy bear. <— ADORBZ
I can’t confirm or deny that it took me awhile to get the hang of the pretty cookie thang though. You see that stack of cookies in the pichaz? ALL the little dudes under the top layer look like this 🙁

Ingredients
- 1/2 Cup Butter softened at room temperature
- 1/2 Cup + 3 Tbsp Powdered sugar. sifted
- 1/4 Cup + 3 Tbsp Cornstarch
- 1/2 tsp Vanilla extract
- 1/4 tsp Lemon rind grated
- Pinch of salt
- 2 Tbsp Unsweetened Vanilla almond milk at room temperature
- 1 Cup + 3 Tbsp Whole wheat pastry flour sifted (130g)
- Sprinkles for decorating
Instructions
- Preheat your oven to 375 degrees.
- In a large bowl, beat together the butter, powdered sugar, and corn starch, using an electric hand mixer,on low speed until well mixed. It will be crumbly.
- Add in the vanilla extract, lemon rind and a pinch of salt and beat on medium speed for 5 minutes, until light and fluffy.
- Gradually beat in the almond milk, and then beat for 1 minute on high speed.
- Fold the sifted flour in 1/2 cup at a time until a dough forms.
- Spoon the dough into the cookie press and shoot onto 2 un-greased cookie sheets, decorating with sprinkles if desired.
- Bake until just lightly golden brown, about 10-11 mins. Immediately transfer to acooling rack to finish cooling.
- DEVOUR.
