These Homemade Pumpkin Protein Bars taste just like pumpkin pie but they are easy, gluten free healthy and great for on the go breakfasts or snacks!

PIN Homemade Pumpkin Protein Bars

Pumpkin Spice AND protein in ONE RECIPE? This makes me very very excited and I know it’s going to make you very excited too.
Theses are different then the paleo protein bars that I shared a while back in the sense of 1. flavor (duh) but also TEXTURE.
They’re not as densly chewy but more muffin-like chewy? Kind of like gluten free pumpkin muffins meets protein bar. It’s hard to describe but I know you are going to like it anyway.
Pinky swear.
It makes them feel perfect for breakfast but also perfect for snack because you and I both know that we want to pumpkin spice ALL THE THINGS. Nothing is safe. Even made pumpkin flavored homemade microwave popcorn once. But, I digress.
Why these Protein Bars are the Best
A protein bar really has it all. What I’m looking for in a protein bar is nutrients to keep my body healthy, the protein to keep my body strong and full of energy, and, of course, the FLAVOR! Slow Cooker Superfood Protein Bars are some of my FAVES to whip up, and seriously- who can resist a Cookies and Cream Paleo Protein Bar? There are so many delicious protein bar recipes on the blog, and now you can add these pumpkin spice protein bars to your list of must-tries! They’re loaded with all the pumpkin spice flavor you want, plus they’re sweetened naturally, and contain loads of protein to get you through your busiest of days! YES PLEASE!
What kind of protein powder works best?
This pumpkin protein bars recipe is super versatile because you don’t have to use a specific type of protein powder! I’ve used both whey protein powder as well as plant based and they both work great in this recipe and result in delicious taste and texture!
Pumpkin Protein Bars Ingredients
I love a recipe with good, clean ingredients, that actually tastes GOOD! Anyone with me on this? This tasty pumpkin protein recipe definitely meets the mark, and here’s what you’ll need to make these tasty bars:
- Pumpkin Puree (not pumpkin pie filling)
- Egg Whites
- Maple Syrup
- Pure Vanilla Extract
- Vanilla Protein Powder
- Truvia
- Pumpkin Pie Spice
- Quick Oats
- Pecans

How to make Pumpkin Protein Bars
Nothing’s better, in my opinion, than something that’s so delicious but also isn’t too fussy to make! That’s another reason why these bars are my JAM. They only take a few simple steps to make a reality and they’re going to be your new GO TO snack! Here’s how to make them:
Prepare
Set your oven to 350 degrees Fahrenheit and let it heat up. Line the pan with some parchment paper, spray it with a bit of oil and set aside.
Stir
In a large bowl, stir together the pumpkin, egg whites, maple syrup, and vanilla extract. In a medium bowl, stir together the truvia, protein powder, and pumpkin pie spice. Add in the quick oats and add the wet ingredients to the dry. Mix it all together until well combined.
Bake
Using a rubber spatula, spread the batter into the prepared pan. Sprinkle with pecans and drizzle with syrup. Pop it in the oven and bake until the middle feels set.
DEVOUR
Cool completely, then slice and serve! Enjoy!
What’s the best way to store Pumpkin Protein Bars
Bake up a batch or two and enjoy these tasty bars later! I recommend storing them in an airtight container in your fridge. They will last about a week this way. If you still have some left after a week (I doubt you will because they’re THE BOMB but anyhow…), simply pop the airtight container in the freezer and keep them in there for up to a month! Delicious, simple, nutritious bars ready to enjoy when you want them!

Hi there! Just found this on Pinterest and wanted to say thanks! I am new to baking with protein, and let me tell you it’s hard to find recipes that don’t include almond or coconut flour (not that I’m against them, I just never have those ingredients on hand). This was exactly what I was looking for. I made them as muffins and they turned out great (I made 9 and baked them for about 23 minutes). Also, I don’t like stevia so I added 3 tbsp of brown sugar instead. And just in case anyone is wondering, rolled oats work fine but I think instant oats definitely would have been better. Thanks again!

Thank YOU for sharing your findings! SO glad you love them! <3

These. Are. AMAZING!!!! I just had a feeling…after 15 tries, they probably aren’t awful. LOL. I needed a make-ahead, easy, healthy snack for my hubs to grab before his 5:30 am workout. Because…you know…I’m not about to get up and make him something at THAT hour. This recipe totally delivers!!! The whole family loved them, and they’re all super picky. Thank you!

Haha! SO glad you love them!

I’m kind of putting oats back on the table because they’re just so good for you! But maybe not this much at a time. Would it be possible to put only 1/2 cup oats and substitute something else for the other half cup? Low carb, as I’m diabetic. Thanks!
Taylor Kiser says
You can try, but I really can’t tell you how that will work as recipes are only tested as written. Hope you understand!

What is wrong with you? Can’t you just put a recipe up without going on and on and on about childish things? Don’t you know adults with busy lives are making these recipes? Don’t you realize we don’t want to scroll and scroll and scroll past your jibbetish just to look at a recipe to find out if it might possibly be suitable? Good grief I hope you don’t do this on your other recipes.
Taylor Kiser says
Hi Sheri. This is a blog, which by definition is a story, it’s not a site like Allrecipes. It takes you 5 seconds to scroll – you don’t have to read the words! Thanks.

OMG this comment is so ridiculously rude! This is HER blog and she can post whatever she wants! How dare you criticize the content of her posts when she is so kindly sharing her own recipes with the community. This is a post that YOU chose to click on and scroll through when you could have simply exited the page and visited Allrecipes like she mentioned. Instead you decided to leave a nasty comment that was totally unecessary and embarassing on your part.
Taylor Kiser says
Thank you so much Michelle!!

I guess it’s Sheri’s first time on the internet. Good luck, Sheri! You’re going to be pretty disappointed with THAT attitude!

I am a health nut and am always on the lookout for nutritious and delicious 😋 recipes. This one did not fail. First time to your beautiful blog and appreciate you sharing your wonderful concoctions! I baked them in a square muffin 🥧tray for 12 mini bars and added in organic dark chocolate chips as well as organic coconut flakes as I have a nut allergy. Will definitely follow you and try some of your other recipes out there! Thanks 🙏 BTW… I did use Quest all purpose protein baking powder and the texture was good. 👍🏽

Thanks for the feedback Mindy! So glad you loved these!
Barb says
Is it possible to use xylitol instead of truvia? I cannot tolerate stevia.
Foodfaithfitness says
Hi Barb – it should work in principles but I haven’t tested it and proportions may be different. Please let me know if you try.
