You have NO idea how many times I started to write this recipe and wanted to stop typing after the words “Puff Pastry” in the title. That’s because puff pastry is one of those delicious kitchen chameleons that can be used in a million and one recipes, not just quiches! From flaky breakfast pastries to savory turnovers, cheesy twists, mini pot pies, tarts, palmiers, or even quick-and-easy pizzas, puff pastry has your back when you need something impressive but low-effort.

But quiche had been calling my name for a while, and see here the results! I’ve kept the filling simple, opting for a cheese-and-ham blend that is great to serve at any meal. It’s a tried-and-true choice that’s delicious without stealing the spotlight from the star: the pastry. If you’ve been making quiches on the regular but want to make the process easier, just roll out some ready-made puff pastry, fill, bake, and enjoy!

Is This Puff Pastry Quiche Healthy?

There are indeed healthier options than puff pastry as a quiche crust—whole-wheat and even crustless immediately come to mind—but it’s okay as an occasional treat. The pastry is made from flour and butter, so it will be rich in carbs, calories, and fat. The eggs are full of protein and minerals and are a great start to the day. Ham also provides protein, but also adds sodium and fat. If you omit the ham, this would fit a vegetarian diet.

Can I Make My Own Puff Pastry?

Yes, but fair warning—it’s a time-consuming task. You’ll need flour, salt, cubed butter, and ice water. Start by making the dough as you would for a basic crust. Once combined, roll it out with a rolling pin into a thin layer, wrap it up, and let it chill in the fridge for 30 minutes.

After chilling, use a rolling pin to flatten the dough into a rectangle about 1/4 inch thick. Fold it as you’d fold a letter before putting it into an envelope: bring the top third down and the bottom third up over the middle. Turn the dough 90° and roll it out again into a rectangle. Repeat this folding and rolling process two more times, chilling the dough for 30 minutes after each turn. After the final turn, wrap the dough and let it rest in the fridge overnight. The next day, it’s ready to be rolled out and used—perfect for your quiche!

What Else Can I Add To My Puff Pastry Quiche?

I’ve kept this one simple, so the focus stays on the crust, but if you wanted to expand the flavor profile of this quiche, you can add any number of ingredients. Bacon, crumbled sausage, diced chicken, or smoked salmon would all work as a meat protein. For vegetables, sautéed spinach, mushrooms, bell peppers, onions, and tomatoes can be added—just use a paper towel to absorb the excess moisture from the cooked veggies, so your quiche doesn’t turn soggy. Chopped herbs like parsley, chives, basil, or dill add freshness, while spices like paprika, thyme, oregano, and nutmeg can give your quiche a bit of a unique taste.

How To Make Ahead And Store

Once the quiche has cooled completely, wrap the remaining slice(s) in plastic or aluminum foil, or store them in an airtight container. The slices will keep for up to 4 days in the fridge. You can also freeze them for up to 3 months. Just wrap the slices first, then put them in an airtight container. Thaw overnight in the fridge and warm in the oven.

Puff pastry quiche pairs beautifully with a variety of light and fresh side dishes to make any meal, from brunch to dinner, a delicious affair. For a simple breakfast, you can serve this quiche alongside Air-Fryer Breakfast Potatoes or Potatoes O’Brien. And for lunch or dinner, it goes nicely with a Green Goddess Salad, Kale Caesar Salad, or a Spinach Salad.

Ingredients

  • 1 sheet puff pastry thawed but cold
  • 1/2 cup milk
  • 4 large eggs
  • 1/2 tsp salt
  • 1 cup cooked ham diced
  • 3/4 cup shredded cheese your choice
  • 2 green onions chopped

Instructions

  • Preheat your oven to 400°F and lightly grease an 8- to 9-inch pie plate.

  • Roll out the puff pastry on a lightly floured surface until it's larger than your pie plate. Gently press the pastry into the plate, folding and adjusting as needed to fit, trimming any excess pastry, if you like.

  • In a mixing bowl, whisk together the milk, eggs, and salt. Evenly distribute the diced ham, half of the cheese, and the sliced green onions over the puff pastry. Carefully pour the egg mixture on top and finish by sprinkling the remaining cheese over everything.

  • Bake in the preheated oven for 25-35 minutes, or until the puff pastry is a rich golden brown and the egg mixture has set firmly.
