These delicious, spice-filled Pork Satay Skewers are the perfect appetizer for any dinner parties or BBQ!

I’ve got to share a little secret: I am completely obsessed with Thai cuisine! From the vibrant, herbaceous, spice-filled flavors to the gorgeous colors and beautiful presentation of each dish, everything about it delights me. Thai cuisine offers an enchanting blend of tastes and aromas, all rooted in fresh ingredients and delicious food. My first experience with this amazing cuisine was at a charming little Thai restaurant in Malibu, California. My friends and I enjoyed yellow curry, pad see ew, pad thai, som tum, larb, and my favorite, those mouthwatering pork satay skewers. There’s just something about those spice-filled skewers that captured my heart! Whether it was the succulent meat or the sweet and salty peanut sauce, I knew I was hooked and never looked back. 

If you haven’t tried Thai food yet, these pork satay skewers are the perfect way to dive in! This recipe is super easy to whip up and tastes absolutely delicious. While there may be a few ingredients, you’ll definitely use them again in your future culinary adventures once you fall in love with Thai food. Most of the ingredients are available at your local Asian supermarket or online. Get ready for a flavor explosion and give this delicious pork satay recipe a try!

Different sauce options

If you’re allergic to peanuts or just don’t like the flavor, there are plenty of other sauce options you can serve alongside these delicious pork satay skewers. Here are several fantastic alternatives! 

  • Chimichurri Sauce: This herbaceous Chimichurri Sauce is made with fresh parsley, kale, oregano, garlic, vinegar, and olive oil. It’s incredibly fresh, zesty, and cuts through richer meats beautifully.

How do I store leftovers?

Once the skewers have fully cooled, store them and the peanut sauce in separate, airtight containers in the fridge. They’ll stay fresh for up to 3 days. To reheat, simply warm the skewers in a lightly oiled skillet over medium heat until they’re thoroughly heated through.

Serving suggestions

If you’re looking to turn these pork satay skewers into a well-balanced meal, then I recommend serving them with a few side dishes. It’s always good to have a plate of veggies. Ingredients

  • 3 garlic cloves minced
  • 1 shallot minced
  • 4 teaspoons grated ginger
  • 2 1/2 tablespoons chopped lemongrass
  • 1 1/4 teaspoons ground turmeric
  • 1/2 teaspoon ground cumin
  • 1 tablespoon fish sauce
  • 1 1/2 teaspoons soy sauce
  • 1 tablespoon light brown sugar
  • 1 tablespoon lime juice
  • 1/2 cup coconut milk
  • 1 1/2 pounds pork tenderloin cut into 1.5-inch cubes

For the Peanut Sauce:

  • 1/2 cup coconut milk
  • 3 tablespoons smooth peanut butter
  • 1 tablespoon lime juice
  • 1 teaspoon fish sauce
  • 1 1/2 teaspoons light brown sugar
  • 1/4 teaspoon chili sauce optional
  • Water as needed

For Garnish:

  • Fresh cilantro optional
  • Cucumber slices optional

Instructions

  • In a bowl, combine minced garlic, minced shallot, grated ginger, chopped lemongrass, ground turmeric, ground cumin, fish sauce, soy sauce, light brown sugar, lime juice, and 1/2 cup coconut milk to make a marinade.

  • Add the pork cubes to the marinade and mix well to coat each piece. Cover and refrigerate for at least 30 minutes.

  • Preheat your grill to medium-high heat. If using bamboo skewers, soak them in water for at least 20 minutes beforehand.
  • Thread the marinated pork pieces onto the skewers. Grill the skewers for 2 to 3 minutes on each side until the pork is cooked through and lightly charred.

  • In a bowl, whisk together 1/2 cup coconut milk, smooth peanut butter, lime juice, fish sauce, light brown sugar, and chili sauce. Add water a little at a time until the sauce reaches a smooth, dippable consistency.
