A decadent combo of mushrooms and Gruyère that looks fancy but comes together quickly and tastes fabulous!

Craving something fancier than plain old pizza? This mushroom tart is more than mouthwatering—it’s luxurious. Think of it as a cross between a pie and a quiche. With its golden, flaky crust and rich, flavorful filling, this tart will have you feeling like a five-star chef in your own kitchen! In fact, I often make this tart when I want something easy yet impressive. Though the tart is perfect as is, I sometimes add a handful of spinach to the mushroom mix for a touch of earthy bitterness to complement the richness of the Gruyère cheese.

I love how the garlic and onions create a savory background for the deep umami flavors of the mushrooms. The bright touch of thyme balances out those rich flavors, and the puff pastry adds an indulgent note of elegance.

I’ll often make this dish for Sunday brunch with my partner and another couple, occasionally adding crumbled sausage or shredded chicken to make it heartier. They always rave about my cooking skills when I serve this tart—so let’s keep it to ourselves that it’s actually not hard to make!

Is This Mushroom Tart Healthy?

This mushroom tart is rich in flavor and makes for a satisfying meal—but it’s best enjoyed in moderation due to its higher fat and calorie content. While the puff pastry and Gruyère cheese contribute most of the fat and sodium, they also provide protein and calcium, while the mushrooms add fiber, potassium, and antioxidants. Mushrooms are a standout ingredient, supplying important nutrients like B vitamins and selenium. The onions and garlic add both flavor and beneficial plant compounds, and the olive oil is a source of heart-healthy monounsaturated fats.

To balance the richness of the tart, serve it with a green salad or top with fresh arugula for extra fiber, vitamins, and a peppery contrast. For a healthier version, consider using a little less cheese or adding more vegetables, such as spinach or bell peppers, to boost nutrients and lower the fat content.

Gluten-free puff pastry can be used for those with gluten sensitivities. To make a vegan tart, choose a vegan puff pastry and cheese, and swap the egg wash for a mix of plant milk and melted plant-based butter—this will still give the tart a golden finish.

Scoring And Docking Pastry Dough

Fancy tarts can be challenging for novice cooks, but using ready-made puff pastry makes them a breeze to put together. Two terms that were a stumbling block for me are “scoring” and “docking.” While not strictly necessary for this mushroom tart, these steps can help create a more attractive and professional-looking result.

Scoring puff pastry means lightly marking a border around the edge of the dough with a sharp knife, about one inch from the sides, without cutting all the way through. Docking refers to poking holes in the center of the pastry with a fork.

Scoring the border allows the edges to rise higher and form a crisp, elevated crust, while docking the center helps prevent it from puffing up too much under the toppings. If you skip these steps, the pastry may puff up unevenly, and the toppings might slide off, or the center could become too thick. For best results and a classic tart appearance, scoring and docking are recommended—but the tart will still taste great if you choose to skip them.

How Do I Store Leftovers?

Store leftover mushroom tart in an airtight container in the fridge for up to 3 days. Freezing is not ideal, as the freeze-thaw process will make the pastry crust lose flakiness and get soggy. If you must freeze leftovers, wrap them well and keep them only for up to 2 months. Reheat in the oven or a toaster oven to restore some crispness.

Serving Suggestions

Mushroom Tart

Ingredients

  • 1 sheet puff pastry thawed
  • 2 tablespoons olive oil
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 1 pound mixed mushrooms sliced
  • 1 1/2 teaspoons dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Gruyère cheese shredded
  • 1 egg beaten, for egg wash

Instructions

  • Preheat oven to 400°F.
  • On a lightly floured surface, roll out the puff pastry to fit a tart pan. Place it in the pan, trim the edges, and prick the bottom with a fork.
  • Heat olive oil in a skillet over medium heat. Add the onions and garlic. Cook until softened. Add the mushrooms, thyme, salt, and pepper. Cook until the mushrooms are soft and browned. Adjust the seasonings to taste, if needed.
